2. Crush crackers finely but not too small. Crushing by hand is best, but a food processor works. Add sugar, then knead in butter into crumbs. Press into 8" pie pan. Chill 15-20 minutes, then bake 15 minute or until crust colors a little. 3. While crust is cooling, beat egg yolks into milk, then add and mix in citrus juice until completely combined. Pour into shell and bake another 15 minutes or until filling has set. Chill thoroughly before slicing. 4. Optional: Serve with whipped cream and a sprinkling of sea salt.
