Theusageoftheenzymepectinaseistheclearchoicewhenproducingapplejuicefromapple
sauce.Usingpectinasecomparedtocellulase,water,oramixtureofbothpectinaseandcellulase
willprovidebetterresultsoverall.*Everyindependentvariabletestedhadfivedropsofitput
intoseparatecontainers,ontopof25mLofapplejuice.Themixturesthenwereeachdropped
ontoacoffeefilteroverafunnel,andtheamountofapplejuiceinthegraduatedcylinderbeneath
thefunnelwasmeasured.
1. Whenmeasuringtheamountofapplejuiceeachgroupproduced,itwasrevealed
thatpectinaseproducedthemostjuice,measuringinat8mL.Theotherenzymeused,
cellulase,producedonly5mLofapplejuicefromapplesauce.Whenonlywaterwas
addedtotheapplesauce,5mLofapplejuicewasalsoproduced,thereforeonecan
concludethatcellulaseisjustaseffectiveasregulartapwater.Thelastgrouptested,the
combinationofpectinaseandcellulase,produced5.5mLofapplejuice.Thatisbarely
anymorethanwaterorjustcellulasealone,thereforeusingacombinationwouldbean
unnecessaryuseofbothenzymes.Pectinase,howeverproducedawhole3mLmorethan
cellulaseandwater,andawhole2.5mLmorethanthecombinationofbothenzymes.
Overall,amountwise,pectinaseisthemostlogicalchoicesinceitproducedthemost
liquid.
2. Costwise,pectinaseisthebestinvestment.Usingpectinaseovertapwaterwould
producemoreapplejuice,thereforebringinginmoreprofitwhichwouldmakeupforthe
higherexpenserateofpectinaseversustapwater.Howevercomparedtocellulase,
pectinaseislessexpensive.Cellulaseisawhoppingdoublethecostofpectinase.Using
cellulasetoproduceapplejuicewouldbetotallyillogical,becausenotonlydoesitcost
doubletheamount,itdoesntproduceasmuchjuiceaspectinasedoes.Thiswouldcause
alossofmoney.Usingacombinationofbothenzymeswouldcosttheamountofboth
pectinaseandcellulase,whichwouldrackupaprettyexpensivebill.Payingforboth
enzymesandnotevengettingthebestresultpossiblewouldbeawasteofmoney.
Pectinasewouldbethebiggestbangforyourbuck.
3. ABenedictsTestwasconductedtodeterminethequalityofapplejuiceproduced
fromeachgroup.If,afterconductingthetest,thecoloroftheapplejuicewasorange,it
wasatthehighestqualitypossible.Ifthecoloroftheapplejuicewasyellowafterthe
test,itwasatthesecondhighestpossiblequality.Thepectinase,cellulase,andwater
mixturesallturnedorangeafterthetest,meaningtheywereatthemaximumquality.
Howeverthemixtureofpectinaseandcellulaseturnedyellowafterthetest,meaningit
wasnotatprimequality.Althoughwaterandcellulasealsoturnedorange,pectinase
wouldstillbethebestchoice.
Pectinaseistheindependentvariablethatproducedthemostapplejuice,wasless
expensivethanbothcellulaseandthemixtureofcellulaseandpectinase,andtheapplejuiceit
producedwasatprimequalityaccordingtothetest.
