APPLE CRUMBLE (BITE ME VERSION)

YIELDS: 4 SERVINGS

INGREDIENTS
Filling
6 tbsp caster sugar
Pinch of ground cinnamon
1 tsp vanilla extract
6 apples, cored but not peeled, 3 of them grated, 3 cut into chunks
Zest of lemon, juice of

For the crumble topping


100g plain flour
2 tbsp brown sugar
50g butter, chilled and cubed
Pinch of ground cinnamon
4 tbsp rolled oats

INSTRUCTIONS
Filling
1) Preheat oven to 200oC.
2) Have your ingredients ready (apples cut, lemon juiced, flour sifted etc)
3) Heat a pan, add caster sugar and heat for about 5 minutes until it
caramelises.
4) Add cinnamon, vanilla extract and grated apples and cook for 1-2minutes.
5) Stir in the apple chunks, lemon zest and juice.
6) Keep it on low heat until it bubbles.
7) Remove from heat and pour it into a ceramic bowl.

For the crumble topping


1) Place flour, sugar, butter and cinnamon in a bowl and rub together with your
fingertips until the mixture resembles breadcrumbs. Add the oats and mix
until fully incorporated.
2) Scatter the crumble topping over the fruit and bake for 12-14minutes until the
topping is a deep golden colour. Remove and serve warm.
