I. Abstract

The enzymatic activity of salivary amylase may be affected by various factors such as pH and
temperature. In this experiment the enzymatic activity and specificity of salivary amylase at
different temperatures and pH values were measured. The data gathered was graphed with
reciprocal time against temperature and pH, both graphs having bell shaped curves. The optimum
temperature for the enzymatic activity of salivary amylase was 37C and its optimum pH value
was 8.
