Management Team
The Green Coffee will be owned 100% by Trieu Le. Trieu graduated from
HUFLIT University, has an undergraduate degree in business administration. During
high school she worked as a waiter in her fathers coffee shop that purchased its beans
from a local roaster in Cu Chi District. So, This job allowed her to learn about the
business first-hand. In addition, Trieu worked in The Coffee House for two years,
eventually rising to the position of assistant manager. After graduation, Trieu secured a
business development position for The Coffee House chain, which provided additional
first-hand exposure to the food and beverage industryespecially the steps involved in
establishing new locations in Ho Chi Minh City. Now she start-up The Green Coffee.
Management Team Gaps
The Green Coffee will rely on its POS (Point of Sale) system to generate daily
accounting and cost activity reports. Trieu will supply these to an accountant for
preparation of annual income taxes.
Personnel Plan

At the coffee shop

The total number of staff members at the coffee shop is 13 with: 2 managers (2 full-time),
2 cashiers (full-time), 4 baristas (part-time), 3 busboys (part-time) , and 2 security guard
(full-time). Their particular job descriptions and requirements are as follows:

Manager (basic salary: VND 8 million/month. And working hour is 8 hours/day, 1 days
off every week)

Requirement
- Skills and experience in service industry

Job description
- Check set-up and personnel at the beginning of the shift
- Monitor operation for the whole shift
- Getting ready to deal with possible problems and situations
- Keep the operation in order
- Manage the inventory, order ingredients from supplier
- Provide the kitchen with ingredient requirements for each shift
- Report to the stakeholders
Training
- 2 weeks of training under current manager and/or owner
Cashier (basic salary: VND 6 million/mo., And working hour is 8 hours/day, 1 days off
every week)

Requirement
- Basic qualifications in accounting

Job description
- Take orders from customers
- Give bills and buzzers to customers
- Take payments
- Transfers orders to the kitchen
- Add up orders and payments for end-shift accounting
- Report the end-shift accounting to the manager
Training
- 1 weeks of training by previous cashier and/or current manager

Barista (basic salary: VND 22 thousand /hour, working 6 hours/day)

Requirement
- Qualifications, skills and experience in food and drink processing

Job description
- Receive orders from the cashier
- Prepare the items ordered
- Take the bills and supply the items to customers
- Estimate the ingredients needed for the shift and inform the manager about the
inventory, receive ingredients from the manager.
Training
- 1 week of training/probation under managers supervision.

Busboy (basic salary: VND 20 thousand/hour, working 6 hours/day)

Requirement
- entry level

Job description
- Clear and clean tables after the customers leave
- Wash and dry the dishes; put the dishes back on the racks and shelves
- Mop the floor at the end of the shift
Training
- 3 shifts of training/probation under managers supervision.
Security guard (basic salary: VND 8 million/month )

Requirement
(under contract with a security company)

Job description
- Welcome customers
- Show customers to the bike park
- Instruct customers how to place and get orders
- Deal with unexpected situations and emergencies

Description of a typical operation day

It is the bus boys responsibility to arrange the tables and chairs, setting up the customer
serving area to prepare for the working day. The manager helps with the arrangements
and checks the tea to serve customers. The cashier takes care of the setup of the cash
register and the order counter to make sure there is enough paper in the cash register and
enough change to give back to the customers. The baristas are responsible for the
arrangement in the preparation area and kitchen. One of the two baristas in a shift sets the
utensils and checks the crockery for cleanliness while the other checks the ingredients for
quality and sufficiency. If there are requirements for more or replacements of
ingredients, crockery, or utensils, the barista reports to the manager for more supplies.
The security guards checks the lighting and power system for necessary repairs if any.

- On the end of an operation day, the bus boy cleans up the serving area, the cashier
clears the order and payment counter, and the baristas clear up the kitchen and
preparation area.
- Every Monday, staff members have a meeting to report on previous week work
results to see if the sales targets were met and find solutions to the problems
arising such as the qualities and quantities of the supplies, difficulties the staff
encountered doing their jobs . This is also the time for the manager to elicit
comments, opinions, and ideas from staff members in order to improve
performance.

Requirement:

Manager: person age from 24-28, have more than one year experience in management:
agile, honest, severe, ability to work under pressure and use initiative and having a
positive working attitude

Cashier: students (part time or full time) have computer skills: agile, honest, has
responsibility, ability to work under pressure..

Barista: person age from 20 30, must have a good barista skills; We prioritize those who
have more than one year experience.

Busboy: Students (part time)

Security guard: person age from 20-35, strong, have a good health.
