Basic Functions:
Administer the entire food & beverage operation in such a manner as to bring into effect the
superior product and service by making the difference in accordance with policies and
procedures adopted by the Resort. Make the difference.

Duties and Responsibilities:


 Directly responsible for all restaurants, culinary and events areas, ensuring a smooth
running, profitable operations within the framework of the hotel.
 Responsible to maintain the overall welfare of our employees by providing them with the
training and resources to take care of our guests.
 Developing and enforcing standards, policies and procedures in the food service,
restaurants and beverage areas.
 Developing, monitoring and taking corrective action of annual operating budget, via
controllable costs, progress reports.
 Attaining high sanitation standards throughout the food and beverage operation by
enforcing the Company Sanitation Checklist.
 Establishing and maintaining positive two-way communications with related
departments.
 Supporting managers with an effective training programme to make them aware of the
expectations and responsibilities that their position entails.
 Identifying and solving problems in a timely fashion.
 Delegating authority and responsibility to managers in a way that the entire food and
beverage operation runs smoothly.
 Appraising managers/employees performance and using effective coaching and
counseling for positive improvement.
 Hiring, developing and retaining quality managers/employees.
 Scheduling managers consistent with volume of business and needs.
 Administering management personal action movement and payroll.
 Ensuring that all legal aspects are being fulfilled in regards to control of liquor, beer and
wine, sanitation and safety.
 Ensuring all managers and employees follow all job safety regulations and all hazards
are reported to concerned departments.
 Ensuring that departments are responsible for asset management of all outlet property
and facilities.
 Ensuring that departments conduct a maintenance inspection on a monthly basis.
 Responding to guest inquiries or concerns within 24 hours in what is deemed the
appropriate manner.
 Performing any reasonable request made by the management which is not life
threatening or against the law.
 Above all, to lead by example through a hands on approach to motivate our employee to
excel.
 Performing other duties as assigned or requested by senior management.
 Keeping the General Manager informed on all relevant issues concerning the
department and the staff and in doing so, on a daily basis providing knowledge for
decisions that benefit team members and guests alike.
 Informing the General Manager of all emergencies
 Representing the hotel and uphold the reputation of the organization, its staff, affiliates
and owners within the organization and in public.
 Refreshing menus and services regularly.
 To maintain quality services.
 Other tasks as defined by the management.

Job Profile & Qualifications:


 At least Bachelor degree in any field
 At least 3 year experience in one of the company’s executive committee members in
international hotels with evidenced tracked record of achievements
 Strong inter-personality, leadership, and creative skills
 Proficiency in English and computer literate
 Excellent public speaking skills (track record of presentation or public speaking training
course)
 Strong in driving results and people management and development

Career Advancements:
 Not inclusive; varies by experience and scope of previous positions
 Cross training in Rooms Division to be certified Executive Assistant Manager (EAM)
