Blueberry Muffins

2 cups all-purpose flour

2 teaspoons baking powder

1 cup sugar

teaspoon salt

1 cup milk

cup (1 stick) butter, melted

2 eggs

1 cups blueberries

1. Preheat oven to 400F. Grease 18 muffin cups or line with paper liners.

2. Sift together the flour, baking powder, sugar, and salt.

3. Make a well in the middle of the flour mixture and add milk, butter, and eggs.

4. Mix with a wooden spoon. When ingredients are well blended, fold in the blueberries. Spoon batter
into cups.

5. Sprinkle tops with sugar; bake for 20 minutes, or until light brown.

Yield: 22 muffins

1 Egg equals to 2 egg yolks or 2 egg whites plus 1 tsp vegetable oil.
Apple Muffins

This basic recipe is delicious with most any fruit, including dried dates, figs, or even cut-up prunes.

2 cups all-purpose flour

1 cup apples, cored and chopped but not peeled

1 cup milk

cup butter, melted

cup sugar

1 egg

3 teaspoons baking powder

1 teaspoon ground cinnamon

teaspoon ground nutmeg

teaspoon salt

1. Preheat oven to 400F. Grease 12 muffin cups or line with paper liners.

2. Mix all ingredients together using a wooden spoon. Batter will be lumpy. Fill muffin cups full. Bake
for 20 to 25 minutes or until a tester inserted in the center of a muffin comes out clean.

Yield: 1 dozen
