Dumpling Recipe

Cabbage and Pork Dumplings

A simple recipe for tasty homemade pork dumplings.

Ingredients

2 cups finely chopped Napa cabbage


1/2 teaspoon salt
8 ounces ground pork
1 tablespoon soy sauce
1 teaspoon Shaoxing rice wine or dry sherry
1 teaspoon sesame oil
2 teaspoons minced fresh ginger
1/4 cup finely chopped green onions including the white parts.
teaspoon black pepper
20 thick circular wonton/gyoza wrappers

Instructions

1. In a large bowl mix the cabbage and salt together, set aside for 10 minutes. Squeeze out any
excess water by hand.
2. Add the pork, soy sauce, rice wine, sesame oil, ginger, green onions, and pepper. Mix together
by hand.
3. Scoop around 2 teaspoons of filling and place it at the center of the wrapper.
4. Wet the outside edges with a finger dipper in water.
5. Fold the edges over the filling to form an enclosed dumpling making sure the edges are sealed
together. You can leave the dumpling as is or pleat the edges for a more decorative touch.
6. Heat a non-stick frying pan on medium high heat with 2 tablespoons of oil. Working in small
batches, fry one side of the dumplings until crispy golden brown. Reduce the heat to medium
low and add 1/3 cup of water. Place a lid on the pan and allow the dumplings to steam and fully
cook the filling. Remove from the pan once the water has fully evaporated.
