Rice Pilaf

This recipe is a generic composite of several others allowing for personal interpretation, so the
ingredients list will be less precise than normal. Rice pilaf is a simple and easy dish that with the right
ingredients can be an amazing part of any meal. Pairs well with grilled or fried meat, but works
especially well with lamb.

Ingredients
2 cups long-grain white rice
2 tablespoons butter/margarine/olive oil (any sort of fat with flavor will work)
1/2 Onion (Yellow is preferred but if you want a stronger flavor use white)
Tip:(Do not use red onions they will completely overpower other flavors)
3-4 cups chicken stock based on type of white rice (water also works but leads to a weaker
flavor)
Salt to taste
Saffron (optional especially due to price)
1/4 teaspoon cayenne pepper or paprika
Additional vegetables as preferred (peas, celery, carrots, tomatoes)
Meat if desired

Instructions
1. Preheat oven to 350 F (175 C)
2. Melt your fat of choice in a sauce pan adding onions, salt and vegetables until onion is
browned
3. Lower heat to low and add uncooked rice until browned
4. Add saffron, pepper, any desired meats and broth to pan bring to a boil
5. Place lid on top of pan and place in the oven for 15 minutes
6. Empty Saucepan into platter and make presentable
