GREEN TEA
Green tea is an unoxidized tea originating in China and has the longest history of any tea. It has been praised for
centuries for its healing and soothing properties. In general, there are four types of green tea based on how the tea
master stops the oxidation process. The traditional way is hand frying tea buds and young fresh leaves picked during
early spring in a large wok. These teas are considered the best quality and contain the highest nutrition (i.e. Shi Feng
Long Jing, Sweet Dew). The most popular way to process green tea is by baking (ie. Misty New Top, Silverfish
Hook, Gunpowder) which allows for a larger quantity of tea. The third way is by steaming (i.e. Sencha). The fourth
way is drying by sunshine. This tea is mostly consumed by locals and is rarely on the market. If you would like to try
this flavor we recommend drinking young green puer cakes. While green tea is produced in over eighteen Chinese
provinces, there are a few famous green tea areas from which we have selected our fine green teas. Since there are
many types of green tea, take time to find the best aroma and flavor based on your personal preference.

Mei Cha (Eyebrow Tea) is the most popular type of green tea in China because of its rich taste. Most Mei Cha is
machine cut to create even shapes for grading but often leads to a heavy, bitter flavor. Our tea is hand picked during
the early spring thus the processed tea is longer than normal and resemble fish hooks. Once brewed, notice the
beautiful jade tea color, fresh aroma and robust flavor without bitterness.

Sencha is the most popular green tea in Japan. The main difference between Sencha and other green tea is that during
production the oxidation is stopped by steaming rather than roasting or frying. This economical certified organic tea
from Zhejiang Province is popular with those who enjoy both a fresh grassy aroma and mild taste.
YELLOW TEA
Yellow tea is legendary for its healing properties. While this cooling tea is very rich in antioxidants, there are only a few
types of yellow tea made due to the complicated and tedious production process. In fact, there are only two yellow
teas commonly sold on the market, Meng Ding Huang Ya and Jun Shan Yin Zhen. Unfortunately, another rare
yellow tea Huo Shan Huang Ya is now only made into green tea. After complex processing, this lightly oxidized tea
has a mild flavor without the grassy smell associated with green tea.

WHITE TEA
Fujian Province
True white tea is made from the Da Bai Hao (Big White Hair) bush which only grows
in a small area in central Fujian province. This tea is dried naturally using sunlight or
low temperatures to preserve the tea polyphenols and anti-oxidants. This results in a
nutritious tea with a gentle aroma and bright, mellow taste that is both subtle and
sweet. This is the most mild flavored kind of tea and is very popular in China for
reducing inflammation, supporting the respiratory system and overall dental health. To
make white tea, the pickers pick the bud and the leaf together and then separate it into
the three general grades creating the types of white tea, Silver Needle, Bai Mu Dan
(White Peony), and Shou Mei.

Our certified organic Silver Needle is the highest grade of white tea made. It is composed entirely of tea buds rich
in nutrition and are picked in spring. It has a very fresh floral aroma and slightly sweet taste. While the flavor is mild, it
has a depth that will leave you enjoying the many nuances of this fine tea. While green tea is the most popular tea in
China many of the world’s best-known tea experts consider high grade white tea to be even finer than green tea.
SCENTED TEA
Scented, or flower tea, is tea that has been infused with certain flowers several times during tea production. While the
flowers are removed, the wonderful aroma and delicate taste remains. There are many types of scented tea, but
jasmine has become very popular due to its soothing quality.

In the cold spring, fresh, young certified organic tea buds from the white tea bush are harvested and then hand-
rolled into tight ‘pearls’ to make this tea. The dried ‘pearls’ are then laid down with heaps of night-flowering jasmine
flowers which are discarded when morning arrives. Early spring white tea buds create this refreshing tea which is
sweeter and milder than other jasmine tea.
DISPLAY TEA
To craft our ball teas, young green leaves are harvested from white tea bushes for their exceptional nutritional value.
These are then hand-sewn together into a rosette of tea leaves. The balls usually have other floral treasures sewn into
their core and, in some cases, the balls are intensely flavored with jasmine. It’s difficult to not marvel at the incredible
workmanship which weaves these fine tea leaves into miniature works of art.

28 Love at First Sight! ! ! ! ! $4.50
When two lovers meet and fall in love at first sight, the Chinese believe that this is a pure kind of love. Jasmine
flowers represent the pure heart. Between them the heart is warm and red represented by globe amaranth. The ball is
made of Silver Needle tea buds from the Da Bai Cha bush, processed as green tea. This tea has a fresh mild taste like
the love it symbolizes.

OOLONG TEA
Oolong tea was first invented in Southern China by the people of Wu Yi Shan and it was named based on the shape
of the dried leaves. Tea makers noted that the dried tea looked like a ‘Black Dragon’ and the name was born. It is
considered the most complicated tea produced and requires great skill and experience to craft the enormous range of
flavors, fragrances and liquor colors. In fact, while oolong is an oxidized tea considered to be between green and black
tea, it can range in oxidation from 15%-75%. Oolong tea is grown in three regions of Southern China (Fujian,
Guangdong and Taiwan) creating four distinct types: Rock Oolong, Chaozhou Dan Cong Oolong, Anxi Oolong
and Taiwan Oolong.

The rarest of the four famous ancient rock oolong tea. Its name comes from the shape of the fresh leaves which are
curled and covered with white down resembling a rooster’s crest. This tea is always lightly roasted to better appreciate
the magnolia fragrance unique to this tea bush. Enjoy the light flavor with a sweet and complex aftertaste.

Da Hong Pao is the most famous oolong tea. It is cultivated from the oldest (over 350 years) and most valuable
plantation. In fact, this plantation only has 5 original bushes left which are constantly guarded. The tea color is bright
red with a sweet aroma that penetrates and lingers deep within. The taste is robust without bitterness. The complex
blend of its sweet, rich aftertaste gives Da Hong Pao’s its unique character.

There are 3 types of roasting in processing rock oolong tea. Our other Da Hong Pao is considered medium roast,
which is similar to the traditional taste. Recently, rock oolong drinkers have wanted to appreciate the aroma of this tea
with less charcoal flavor. Baking the leaves at a lower temperature and for a shorter amount of time creates this
desired flavor. Our Da Hong Pao Light Roast has a fresh flavor with a fragrance easy to enjoy. A great tea for new

One of the four famous ancient rock oolong teas. This medium roasted tea has a strong dark chocolate aroma and
sweet floral aftertaste that never goes bitter. Compared to other medium roasted tea, which have a heavy concentrated
taste, Shui Jin Gui gives you a clean slippery feeling that allows you to appreciate the character of this ancient bush.

Of the four famous rock oolong teas, Shui Jin Gui and Bai Ji Guan have a mild and sweet character compared to the
other rock oolongs. This Shui Jin Gui is lightly roasted to easily appreciate the floral aroma. The light pure taste has a

Imperial Rou Gui is a Zheng Yan Cha meaning it grows in the central part of the Wu Yi Mountains known for its
mineral rich soil. The name comes from the Chinese herb we call cassia, which has a fragrance similar to cinnamon.
This tea is lightly roasted over charcoal so you can easily appreciate the cassia aroma with a hint of orchid and honey.
Enjoy the lovely fragrance over many infusions. Like other famous rock oolong tea, you will notice the mineral flavor
that never goes bitter and leaves a pleasant, sweet aftertaste.

This tea from the MeiZhan bush is famous for its unique fragrance similar to dried plums. It grows mostly on the
foothills of the Wu Yi Mountains and is popular for its rich aroma and much milder taste compared to other rock

Like our Imperial Rou Gui, this tea also grows in the central part of the Wu Yi Mountains known for its mineral rich
soil. The traditional medium roast of this tea creates a strong full-bodied flavor with a hint of dark chocolate. The
lingering aftertaste leaves a slightly sweet taste and characteristic cassia aroma. The rich flavor and many infusions
make this a great choice as an everyday rock oolong tea.

This tea comes from the special Dan Cong bush Xing Ren Xiang named so because of its fragrant almond aroma.
The small tea leaves of this bush are picked during the early spring and gently processed by the tea master to ensure
whole soft green-yellow leaves. This results in a rich robust taste without a heavy feeling like other Dan Cong teas.
The sweet fruity aroma is reminiscent of a spring garden in bloom with a hint of vanilla. Although the fragrance and
flavor of this unique tea is milder than other Dan Cong Oolongs, it can be infused many times while maintaining its
rich flavor and aroma.
48 Jin Jiang Mi Lan Xiang (Gold Medal Honey Orchid)Served in Yi Xing pot for one! $9.85
This special Dan Cong tea first received a Gold Medal in 1998 for quality and taste. It continues to be a superior
example of oolong tea from Guangdong Province. Unlike common Snow Orchids, the mostly whole leaves result in a
gentle aftertaste that continues to develop over many infusions. This elegant tea carries both the sweet fruity aroma
and mild flavor of other Dan Cong teas, but with a smooth consistency not often seen. The high amino acids,
decreased caffeine and complex flavor make this a must for tea lovers.

Qilaishan is a high mountain region most famous for its sheer rock cliffs and more recently, high altitude tea. It is
extremely difficult to cultivate tea in this region but the environmental conditions are ideal for growing highly fragrant
nutritious tea leaves. Qilaishan Long Wu (Dragon’s Fog) grows in rocky soil with little water creating a clean sweet
taste. The tea color is bright green with a long lasting mild aroma. While the flavor is mild, note the lingering smooth
aftertaste that points to the complexity of this unique Taiwanese oolong

This tea comes from the Qing Xin Oolong bush that grows 1200 meters above sea level in the fog-shrouded
mountains. You can feel the honey flavor gradually develop while enjoying this tea. The bright golden tea color is
richer than other Taiwanese tea and will turn slightly red after longer infusions. The red color resembles a beautiful
woman’s rosy cheeks thus explaining the name Oriental Beauty.

This tea comes from the Qing Xin Oolong bush that grows 1500 meters above sea level in the fog-shrouded
mountains. The clouds and high altitude create a nutritious tea rich in chlorophyll and amino acids. While the dry
leaves have a sweet honey fragrance, the brewed aroma shifts to resemble light sugarcane. The tea color is a bright
honey-green color. The clean flavor is robust without heaviness, and it never turns bitter. Our Alishan Gao Shan Cha
is an excellent example of high quality Taiwanese Oolong tea. A treat for connoisseurs!
BLACK TEA
Black tea, sometimes known as English Breakfast tea or Red tea, is the most commonly consumed tea in the world.
At Seven Cups we only sell full-leaf black tea from Yunnan, Anhui and the legendary Lapsang farm in the Wu
Yi Mountains. In fact, black tea originated in the Wu Yi Mountains. These teas are finally being acknowledged in
China as genuinely top quality teas in their own right. They are hand-picked and laboriously hand processed, achieving
the exact amount of oxidation to produce the unique rich, robust black tea flavor and beautiful amber red color. Black
tea is usually taken with milk, sugar or other flavorings (a tradition that was initiated to hide poor taste!) but we

Our Taste of China offers larger groups a great opportunity to try a variety of teas and
sweets. A group of six would receive 3 large pots of tea, 6 Japanese sweets, and 1 Rock Oolong
tea served in an YiXing Pot. A group of 14 would receive 7 large pots, 14 sweets and 1 Rock
Oolong tea served in an Yi Xing Pot. Great for baby showers, birthdays, & celebrations!!
Maximum time for our Taste of China is 1 & ½ hours, and reservations are required.
