ESSENTIAL FOODS

To bring about a good nutrition is necessary know what kind of food eat and where it comes
from. A good diet must be balanced and complete, which covers all the needs.
The man, like every living being, needs to feed for:
• Replenish the losses of living matter consumed by the activity of the organism.
• To produce the necessary substances for the formation of new tissues, favoring the growth.
• Transform energy contained in food into heat, movement and work.
CLASSIFICATION
Food can be differentiated into different groups in the so-called "food wheel".

 Group I
Milk and derivatives. They are plastic foods. In them, proteins predominate.
 Group II
Meat fish and eggs. Plastic food. In them, proteins predominate.
 Group III
Legumes, nuts and potatoes. Energy foods, plastics and regulators. In them they
predominate the Glucose, but also they possess important amounts of Proteins,
Vitamins and Minerals.
 Group IV
Vegetables. Regulatory foods. In them predominate the Vitamins and Minerals
 Group V
Fruits. Regulatory foods. In them predominate Vitamins and Minerals.
 Group VI
Cereals. Energetic food. In them they predominate the Glucose.
 Group VII:
Butter and oils. Energetic food. In them predominate Lipids.

Classification of foods by origin

Food by its origin are classified into three groups:


 Those of vegetable origin: vegetables, fruits, cereals.
 Those of animal origin: meats, milk, eggs.
 Mineral origin: waters and mineral salts.
Importance
Each of these foods provide our body with substances that are essential for its functioning
and development. These substances are:
 Carbohydrates (bread, flour, sugar, pasta), high energy.
 Proteins (meats, eggs, dairy products, legumes) necessary for the growth and
formation of tissues.
 Lipids (fats and oils) producing energy.
 Waters and mineral salts in varying proportions for the balance of the functions
of the organism.
 Vitamins, complex chemicals, in minimum quantities, but indispensable for the
good state of the organism.
