Success Story
Cathy – Her Final Straw!

Two things led to my final straw to begin Weight


Watchers. 1) I was volunteered/told to be on a
wellness committee at work. I just “mentioned”
Weight Watchers during a meeting, and all of a
sudden I was in charge of getting a class together!
I made a pact with God that I would “try” it… IF
I didn’t weigh X lbs. Well, as fate would have it, I
weighed in 1 pound under X. I’m convinced God
has a sense of humor. 2) I became painfully aware
that I could no longer find clothes to fit at Ross. I
had come to the end of the rack. Thus, started my
long journey with Weight Watchers. Pre‑ Weight
Watchers, my highest weight recorded was
312 pounds.

It took over 3 years to reach my goal weight. I lost a


total of 129 pounds (Weight Watchers recorded).
Before I maintained at goal for over a year. Then… life
happened. My husband and I are foster parents,

Easy Blueberry Buttermilk Cake SmartPoints

Servings 18
Serving Size: 1/18th INSTRUCTIONS

INGREDIENTS 1.  Preheat oven to 325°. Grease a 13 x 9 inch baking pan


with baking spray.
2-3/4 cups cake flour
1-1/2 tsp baking soda 2.  In a large bowl combine flour, baking soda, and salt in a
large bowl. Mix well.

1-1/4 cups sugar 3.  Using a hand mixer or stand mixer, in a medium bowl,

4 tbsp softened unsalted butter beat sugar and butter for about 3 minutes. Add egg and
egg whites one at a time and beat until combined. Add
3/4 cups unsweetened applesauce
buttermilk, vanilla and applesauce until incorporated.
3/4 cups low fat buttermilk
4.  Add wet ingredients to the flour mixture and stir until
2 cups blueberries
just blended. Gently fold in blueberries.
1 large egg, beaten
5.  Place the batter into the prepared cake pan; bake cake
2 large egg whites
until a toothpick comes out clean, about 30‑32 minutes.
2 tsp vanilla
Serve room temperature.
