Sisig is a Kapampangan dish made from parts of pig head and

chicken liver, usually seasoned with calamansi, onions and chilli


peppers.

Pork Sisig Ingredients


1. 2 lbs pigs's head parts (face, snout, cheeks, and ear)
2. 1/4 lb liver (chicken, pork, or beef)
3. 1 tablespoon garlic; minced.
4. 1 medium size onion; chopped.
5. 3 chili peppers (siling labuyo) chopped.
6. 3 calamansi fruits; sliced.
7. Salt and pepper to taste.

Bicol Express is a popular Filipino dish which was popularized in the


district of Malate, Manila but made in traditional Bicolano style. It is
a stew made from long chilies (siling mahaba in Tagalog), coconut
milk, shrimp paste or stockfish, onion, pork, and garlic

6. 3 tablespoons minced ginger.

Crispy Pata is a Filipino dish consisting of deep fried pig trotters or
knuckles served with a soy-vinegar dip. It can be served as party fare

specialty. The dish is quite similar to the German Schweinshaxe.
