Time Order of Work

9:00- 9:05 Collect all ingredients and equipment needed to complete task.

9:05- 9:35 Prepare Bread

In a large bowl, dissolve yeast in warm water. Add the sugar, salt, oil, and flour.
Beat until smooth. Stir in enough remaining flour at a time to form dough.
Turn onto a floured surface; Knead until smooth and elastic for 8- 10 minutes.
Place in a greased bowl, turning once to grease the top. Cover and leave to rise
until doubled, 30- 45 minutes.

Prepare Jam

Peel the pineapple and grate. Heat the pan. Add the pineapple pulp and water.
Let them cook for 20 minutes on medium flame. Stir frequently. The pineapple
pulp should become soft. Now add the sugar and lime juice. Let the mixture
cook for 30 minutes. The mixture is thickened and the jam is ready to be
stored. Spoon the jam into a sterile jar with a tight- fitting lid.

9:35 ‘ Prepare Pickled Mangoes

- 10:30 Combine water, vinegar, and salt in a small sauce pan and stir until salt
dissolves. Set aside. Wash and peel mangoes and cut into desired shape. Place
into sterile ware bottle and pour vinegar mixture over.

10:45- 11:45 Prepare Plantain Roll

Peel and slice plantains. Place oil to heat, then place plantain to fry until
golden brown. Allow plantain to cool, sprinkle salt and then roll it into sausage
and stick toothpick to hold.
