CHAPTER I

INTRODUCTION OF THE STUDY

Background of the study

Cookery students not only in CRAAHS but throughout


the other school is need to perform the food safety
and sanitation while performing to their working
area. Maintaining a clean work environment is
critical in preventing foodborne illness. Bacteria
can grow on unsanitary surfaces and then contaminate
food. Just because a work surface looks clean does
not mean that it is sanitary (BC Cook Articulation
Committee).

Food safety and sanitation are both described as a


proper practiced of food handling and preparation
but, they are different in a specific meaning. The
term food safety is described as a set of standard
to promote the safe and healthy food to be prepare
during the food preparation while, the sanitation
is defined as a hygiene practices in the surfaces
of working area, tools, utensils, and equipment.

During food preparation we are assuring the


cleanliness of our ingredients, tools, utensils,
equipment, working area and also the proper hygiene
of a food handler. Food safety and sanitation is
the most important way in food preparation. Food
safety is important to avoid food contamination,
food borne illnesses, and also to protect us from
the spreading of microorganisms to the food that we
are going to eat. Sanitation is more than just
cleanliness it included all of the practices
involve in protecting food from the risk of
contamination.

All over the world people are seriously affected


every day by diseases that are caused by consuming
unhygienic and unsafe food. We have to give due
emphasis to good hygienic practices to prevent and
control foodborne diseases. Foodborne diseases
result from eating foods that contain infectious or
toxic substances. The food we eat should be free
from contaminants such as microorganisms and
chemicals. It will introduce the principles of food
safety and sanitation. You will also learn about
food control, food inspection and supportive
enforcement measures that can contribute to food
hygiene and safety. (the open university GB 2019).
Statement of the Problem

The motive of this study is to verify the food


safety and sanitation of SHS TVL Cookery students
of CRAAHS.

Specific questions which the study sought to


answer:

1.What are the cleaning agents used in sanitizing


the utensils and equipment to ensure food
safety?

2.What are the steps they perform in sanitizing


the utensils and equipment?

3.How they sanitize their utensils and equipment?

4.How safe are foods they cook?

5.How they wear Proper Personal Protective


Equipment (PPE) to ensure food safety?

Significance of the study

This study may can help to improve the skills of


the students in the field of research they will be
aware also to their performance of practicing food
safety and sanitation. The teacher may aware to
guide the students while performing in the working
area.

Students

Through this study the cookery students were going


to perform awareness of food safety and sanitation.
It will encourage them to practice the food safety
and sanitation during food preparation. Students
may improve their initiative to increase the
awareness about food safety and sanitation.

Teachers

By the aid of this study the teacher would going to


aware to guide students during food preparation on
what are the students need to accomplish to acquire
the food safety and sanitation practices. They will
be able to share some knowledge or ideas to their
students.

Researcher

The result of this study would be a great help to


some researchers who desires to conduct similar
studies in the future, since this will serves as
their reference. They are able to know the food
safety and sanitation practices.
Scope and Delimitation of the Study

This study is conducted to discover how food safety


and sanitation was practiced by the students in the
working area.

This study was conducted during the 1 st Semester of


S.Y. 2019-2020 to the working area of TVL Cookery
in Cong. Ramon A. Arnaldo High School. The student
researchers conducted an interview to observe the
food safety and sanitation of TVL Cookery students
during their preparation to their working area to
determine the performance of the TVL Cookery
students about food safety and sanitation.

Definition of Terms

Utensil

A utensil is a tool you can hold in your hand and


use around the house. In the kitchen,
common utensils are the knives, forks, and spoons

that we hold in our hands and use to eat.

Equipment

Equipment usually refer to the larger items in the


kitchen that handle the bulk of the preparation and
cooking processes ( K. Alo, 2018).Refers to the
apparatus in the kitchen like stove, oven,
refrigerator etc.

Personal Protective Equipment (PPE)

Personal protective equipment, commonly referred to


as "PPE", is equipment worn to minimize exposure to
hazards that cause serious workplace injuries and

iveequipment/). Is a protective clothing, helmets
goggles or other garments as a protection for
injury or infection.

Sanitation

Sanitation refers to the provision of facilities


and services for the safe management of human
excreta from the toilet to containment and storage
and treatment onsite or conveyance, treatment and
eventual safe end use or disposal

to the steps we can take to prevent disease to
protect our health.
Food Safety

Food safety means knowing how to avoid the spread


of bacteria when you're buying, preparing, and

Food Borne Illness

Foodborne illness or food poisoning is caused by


consuming food contaminated with pathogenic
bacteria, toxins, viruses, prions or parasites

ss.htm).Refers to the contamination when the food
is not well prepared.

Cleanliness

Cleanliness is the degree to which people keep


themselves and their surroundings clean

making ourselves, surroundings, and the food that
we are going to prepare.
Working Area

The place where a person, or people work
