ABSTRACT
Acrylamide is a toxic and carcinogenic chemical and is present almost everywhere, even
in our water. Acrylamide has higher affinity for DNA, proteins and nerve endings to cause
neurotoxicity, cancer and mutagenicity in mammals. As acrylamide forms an adduct with
haemoglobin, it’s quantity can be measured using a paper based electrochemical biosensor.
The graphs obtained from galvanostat will give us the peak which will evaluate the
acrylamide concentration present in blood and in foods. From previous studies it is evident
that more the acrylamide concentration, decreased will be the current peaks because of
hindrance of electron flow.
