Millets Arancini

Ingredients

Flaxseed Gel

1 Tbsp Flaxseed Crushed

3 Tbsp Hot Water

Arancini Balls

1 Cup of cooked millets

½ cup of fenugreek leaves chopped- optional

3 tsp Garlic Minced

1 Tsp Zest of Lemon – Optional

½ cup spinach Chopped

Micro greens

Sea salt

Black pepper Powder

½ cup Mozarella Cheese Grated

Other Ingredients

100 ml milk

1 tbsp crushed Flax seeds

½ cup bread crumbs

Sea salt

Black pepper

Accompaniment

Mayonnaise
1. Mix flax seeds and water and stir for a while and keep aside for 5- 7 minutes until it turns
into gel.

2. Now take all the ingredients mentioned under arancini balls along with flax seed gel and mix
well and start forming small lemon size balls or flattened tikki’s .
3. Now keep these arancini balls in chiller for 6-7 minutes or in freeze for 30-40 minutes.
4. Now take out arancini balls out of chiller and keep aside
5. Take one deep bowl add milk and crushed flaxseeds and mix well with whisk.
6. In a bowl take bread crumbs, sea salt and black pepper and keep aside
7. Heat the oil in pan and coat the arancini balls with milk mixture and roll it with bread crumbs
mixture and put in pan for frying.
8. Once fried remove from pan and serve hot with mayonnaise or caviar.
