“Strawberry Daiquiri”

Ingredients:
 4.02 light rum
 ½ fresh strawberries
 ½ frozen strawberries
 Juice of 1 lime
 Sliced lime ; garnish

“Petite Pea Tomato Salad”

Ingredients:
 2 plum tomatoes, seeded and cut into thin strips
 ½ cup frozen petite peas, thawed
 1 tablespoon olive oil
 1 tablespoon red wine vinegar
 1 tablespoon grated Parmesan cheese
 1 garlic glove, minced
 1 teaspoon sugar
 1/8 teaspoon salt
 1/8 teaspoon dried basi
 1/8 teaspoon pepper
 1-1/2 cups shredded lettuce
Soup
“Creamy Squash Soup”

Ingredients:
 1 tbsp unsalted butter
 ¼ cup onions, chopped finely
 500 grams squash, cut up
 3 cups water
 1 pc bay leaf
 Salt and ground black pepper to taste
 ½ cup Alaska Evaporated Milk
 1 pack Alaska Cream All-Purpose Cream
Relishes
“Sweet Pickle Relish”

Ingredients:
 3-4 pounds medium pickling cucumbers,
unpeeled, finely chopped
 2 cups finely chopped onion
 3 tablespoons pickling or kosher salt
 2-3 quarts ice cold water
 1 ½ - 3 cups granulated sugar, depending on just
how sweet you like your relish
 2 cups cider vinegar 1 ½ teaspoons mustard seeds
 1 ½ teaspoons celery seeds
Canapes
“Egg and Bacon Canapes”

Ingredients:
 3 hard boiled eggs, peeled
 3 slices whole wheat or white toast
 ¼ cup low-fat mayonnaise
 ½ tsp Dijon mustard
 1 tsp chopped fresh herb plus additional
garnish
 Dash hot sauce
 Pinch freshly ground pepper
 2 slices cooked bacon, cut into bite-sized
pieces
