Tomato Soup Recipe

Serves: 6
Preparation time: 15 minutes
Cooking time: 20 minutes

Ingredients : 2kg fresh tomatoes 1 table spoon of tomato puree


1 litre vegetable stock salt and pepper
2-3 sugar to individual taste 150ml double cream
3 table spoons of olive oil

Method: Heat a large saucepan over a medium to high heat with a dash of ol-
ive oil in and fry off the tomatoes for 5 minutes.

Add the tomato puree plus two tablespoons of olive oil and continue to cook
for another 2 minutes

Pour in the vegetable stock and bring to boil before turning the heat down so
the soup can simmer for 8 minutes.

Then blend the soup into a smooth consistency before adding salt, pepper
and sugar to your taste.

Put back on the heat and add cream to finish.
