Isolation Pectin from Durian Skin Using Concentration Variate of HCl Inorganic Acid

ABSTRACT
Durian (Durio zibethinus murray) is a horticultural plants originating from the Southeast Asia region.
Durian will produce waste or effluent like seeds and durian skin. One of methods for utilizing waste durian
is the pectin isolation. Durian skin is like any other fruits skin which containing pectin. Pectin is a
hydrocolloid polymer that be used in the food industry as a thickener. This study aims to isolate pectin from
waste durian skin using a variation of the concentration of inorganic acid (HCl), from characterization of
FTIR pectin spectra and determine the influence of yield and moisture content towards variate of HCl
concentration. Pectin isolation process begins with extraction step that do addition of solution of HCl
inorganic acid each concentration namely 1N, 2N and 3N. Furthermore, filtrate sedimentation from
extraction result using alcohol to produce pectin gel then performed filtering and washing to obtain wet
pectin. After that do drying of wet pectin to get dry pectin which is then pulverized and then analyzed.
Pattern from FTIR pectin spectra produced by the concentration of HCl 1N, 2N and 3N have a similar
pattern to the pattern of absorption FTIR spectrum of standard pectin. From the research results obtained
yield and water content in a row with the use of HCl 1N, 2N and 3N are 2.428%, 2.784% and 2.972% and
6%, 8% and 9%. Pectin durian skin produced comply with quality standards pectin. Highest yield obtained
in the use of 3N HCl is 2.972%.
