Introduction

Harrison has 12 months to become active in the family food-catering business, Kare-Full Katcring, Inc. or
it will be sold to two key employees for a reasonable and fair price. Harrison’s only involvement with this
business was as an hourly employee during high school and college summers. In fact, he doesn’t
understand what operations management really involves. In 1991 Kare-Full Katering, lnc., had $3.75
million in sales in central Ohio. Net profit after taxes was $105,000. There are 210 employees in this
labor-intense business. Institutional contracts account for over 70 percent of sales and include partial
food services for three colleges, six commercial establishments (primarily manufacturing plants and
banks), two long-term care facilities, and live grade schools. Some customer locations employ a
permanent operations manager; others are served from the main kitchens of Kare-Full Katering.
Harrison has decided to spend the summer around Kare-Full Katering-as well as institutions with their
own food services-to assess.

ISSUES IDENTIFIED

In this case, Harrison has and opportunity in the family business but he lacks interest and knowledge of
business operations and does not understand operations at all because he has a master’s degree in
education and teaches junior high school music. And also if he becomes active in the business, one of
the two key employees, the vice president of operations, will leave the firm.

sale price, added value, etc.).
 Know the human resources that are involved in the process.
 Get to know in depth the management of the supply, inventory and delivery schedule.
 Determine the maintenance aspect of your fixed assets.

strategies that the company has.

The input-transformation-result relationship, so Harrison must take into account the decision-making
process according to the corporate strategy of his company that allows him a tactical and efficient
planning in his production process.

3. What problems do you expect Harrison to encounter this summer-r-both at Kare-Full and at other
institutions?

On an organizational level Harrison will find a certain entropy, given the resignation of the former vice
president of operations, for which he will need the execution of a joint to learn about the company's
situation and learn more about the operations activities carried out in the company.

I could also find a certain rejection of the new administration since it is very possible that there is an
organizational culture for the moment outside of it.

In addition, at the level of operations and production, Harrison will find a variation in the demand for
the products because it is summer, so you will have to face problems regarding inventory management,
utilization of installed capacity management, related to the scaffolding in the sale and in the existing
contracts in the company (since most of its contracts are institutional) for being a change of season.

4. If you were Harrison, what would you do? Why?

Initially, take advantage of having worked in the company and with the knowledge and experience
acquired during the summer, deepen and investigate those issues related to operations activities and
the management of the company as such. In the second instance, it is very important to know human
talent, given that it is a vital input in the company, and that it tends to entropy; This is why it is essential
to have a good relationship with the workers of the company, to learn more about the organization, to
adapt to the environment and make specific decisions in each area.

On the other hand, manage the business unit; this refers to enabling departments such as Human
Resources, Finance, Operations, Marketing and R&D, to integrate and facilitate a flow of information
that encourages decision-making related to capacity, personnel, and quality, among others. .

Finally, the operating system is made up of people, parts (which refers to inputs and raw materials),
Plants (factories), Processes and planning; It is essential to know how to administer this system and
manage operations through articulated processes, planning, conception and assembly of the system and
its management and operation, in order to achieve the optimization and maximization of resources and
cost reduction.
