about a year ago, I excitedly
announced that a leak in my
bathroom meant I could justify
renovating the tired, multi-coloured space. I’m just
ON MY WISH LIST
going to be honest... life got in the way of that. And
not only life, but a feeling of being overwhelmed by all the options:
even basic decisions such as choosing tiles felt beyond me! It’s about
headspace, of course – I simply need to take 20 minutes with this
(beautiful) magazine, tear out some pics and start thinking about
what would work for us. It’s the perfect issue to do just that – 36
pages of gorgeous rooms with 75 inspiring ideas to steal, including

Also in this issue we’re stepping behind the scenes of Channel 7’s

the spaces far surpassed our expectations, considering how little
renovating experience the contestants often have. To quote judge
and HB editor-in-chief Wendy Moore, “We see some of the most
creative ideas come from them, simply because they don’t know the
rules of design. That can make for some incredibly original, intuitive
design that is truly inspiring.” I’d have to agree – and it certainly puts
my year-long paralysis about my bathroom into perspective.

ENVIABLE OUTLOOK Taking its cues from the surrounding landscape, the
newly built Queensland Sunshine Coast home of tree-changers Brenda and
Randy features acres of glass – all the better to take in the views – and a
palette of warm timber, dotted with carefully chosen, timeless furnishings. In
the dining room (opposite), copper pendants from About Space and classic
Wishbone chairs around the dining table blend in beautifully. The table was
one of the few furnishings the couple brought from their previous abode in
Melbourne. “I’d always wanted an old French dining table and we needed
something to fit the relatively narrow space, so when I found this one in
an antiques store in Malvern, I knew it would be perfect,” says Brenda. The
wet-edge pool that runs the length of the home’s second pavilion appears to
float in line with the view. While timber and tiles were chosen to blend into
the landscape, a bright Cosh Living chair provides a vivid colour pop. >
W
ith an undulating access road almost a kilometre
long, traversing creeks and winding past duck
ponds and pockets of rainforest, it’s a real journey
to get to Randy and Brenda’s home in the
Sunshine Coast hinterland. Anticipation builds at
every turn, before their striking architectural home, nestled on the
side of an escarpment on the site of a former pineapple and citrus
farm, is finally revealed. “When we pulled up at the front with the
real estate agent, Brenda just got this look in her eyes and I thought,
‘Uh oh, I’m done for now!’ ” recalls Randy. “It was a much larger
block than we’d been looking for and it didn’t have ocean views, it
faced west. But just like Brenda, I could see it was really special.”
So special, in fact, that the couple, who were living in Melbourne
at the time, had to fly back to Queensland to have an interview with
the owner of the block, who wanted to meet prospective buyers.
“I think he wanted to make sure we’d be good custodians, and
fortunately he agreed to the sale,” says Randy. The area’s rolling green
hills reminded Randy of his homeland of Colorado in the US, while
for Brenda, who grew up on a sheep and wheat farm on Queensland’s
Darling Downs, the prospect of moving north to build their dream
home felt like a return to her rural roots.

The couple were keen to build a home that would sit comfortably
within the natural landscape, and enlisted local architect Dan Sparks
of Sparks Architecture to tackle their challenging brief. “Randy and
I are very different, so the house had to draw together a lot of ideas,”
explains Brenda. “Randy was keen for something very open, and
I wanted something that resembled a shearing shed with lots of
tactile elements. Amazingly, Dan just ‘got’ us, and the first mud map
he drew up on site is pretty much what we went with.”
The finished result, designed as two pavilions, is far more luxe than
a sheep shed. A natural thread runs through the split-level home,
with textural rammed-earth walls, wide spotted-gum floors and
chunky timber beams, studded with industrial-style bolts. One
pavilion hosts the guest quarters, overlooking a pool and a sea of
trees, while Randy and Brenda spend most of their time in the lower
pavilion, where a run of glass sliding doors gives the open living,
kitchen and dining area unimpeded views across mountain ranges.
For the interiors, the couple found working with Martine Blair of
Zooi Design invaluable. “We had a Federation house in Melbourne,
so we basically started again with new furniture and pieces
throughout,” explains Brenda. “Martine was a wonderful mediator
who brought together Randy’s and my different ideas.”
Now, almost two years since the house was completed, the couple
have embraced a complete change of lifestyle. “We’ve both retired
since moving here, and Randy has swapped his company car for a
tractor,” says Brenda. “We’re regenerating vegetation where we can,
and although the property is more work than we imagined, it’s really
satisfying. Living here really connects with something within me.”

OUTDOORS To enhance the resort-like feel, basalt rock steppers softened


with mounds of no-mow grass pave the way to the gym overlooking the
pool (top left) and the front entrance (left). In keeping with the home’s
connection to the landscape, there’s no front door as such. Instead,
antique French doors, positioned below a glass ceiling, invite visitors
to tread their way across steppers bordered by an internal garden and
water feature. “You drive over two creeks to get here, so I always think
of this as the final water crossing before arriving,” says Brenda.

OPEN-PLAN LIVING The natural beauty of spotted gum is celebrated in all its forms throughout the home.
“We used it as veneer for the cabinetry, the internal beams are laminated spotted gum and we wanted the
floor to feel warm and evoke the look of a worn, woolshed floor, so we went with feature-grade timber
boards to get the imperfections,” explains Brenda, pictured in the kitchen with Randy. “For me, the tactile
look and feel of old timber is intrinsically relaxing.” In the living area, a Gyrofocus fireplace from Oblica
rotates to provide wonderful warmth, whether curled up on the couch or dining outside at night.
KITCHEN The galley kitchen (above left) commands a central position, with the five-metre-long island – with under-bench drawers clad in Leaf Green
Formica (below) – running parallel to the view. To give the space a natural look, spotted-gum cabinetry was given a 2-pac matt finish to reduce shine,
and charcoal porcelain was chosen to run across the benchtop. A Smeg downdraft rangehood pops out of the island bench when needed. “The ceiling
was too high for a standard cylindrical rangehood, and we didn’t want anything which would impede the outlook, so a hidden one within the bench was

MAIN BEDROOM A spotted-gum wall forms a rich backdrop for


the floating timber bed, dressed in linen sheets, a throw from

pendant from Hub Furniture is ideal for bedtime reading and adds
a sculptural element. “It does feel as if we’re up in the clouds at
times,” says Brenda of the elevated view. “Some mornings you wake
up and there’s a pillow of clouds on the lake, which get lifted up
by the wind and float past the bedroom. It’s wonderful to watch.”

Randy: “The fact there are so many different
spaces to enjoy the house, views and landscape.
It’s the ultimate in ‘glamping’. In summer, I love
being able to open up the doors and bring
the outside in, and in winter it’s cosy to be
tucked up on the couch or in bed, looking
out to early morning mist.”
Which spot do you enjoy spending time?
Brenda: “It’s pretty special to sit in bed
watching the birds in the tree canopies.”
Why is the house great for entertaining?
Brenda: “It’s at its best when we have visiting
friends and family. We make the most of all
the spaces. We’ll use the firepit at night, stay in
the pool longer and cook outside on the deck.”

the renovation, although a 1970s signature archway was removed
and the windows were widened. New cabinetry and appliances
completed the major changes, with a benchtop in Caesarstone
Clamshell complemented by a splashback in the same material,
in Statuario Nuvo. “I love the new kitchen,” says Elleni.

a cup of coffee here,” says Elleni of the pretty space at the front

adds. “It’s lovely with the curtains drawn and the sun streaming

brown background with yellow flowers, very ’70s.” Adds Harry:
“It will probably come back, by the way!” Large-format ‘Marvel’

Elleni: “We had to work on Harry for the
render on the exterior of the house.”
Harry: “It was a new thing to me, so I wasn’t
too sure about it. And it was such a major
thing to do. Luckily our daughters, sons-in-law,
Victoria and Elleni were all on the campaign.
It was certainly the right decision. ”
What appealed to you about Victoria’s
style? Elleni: “I loved her design flair and
classic style. I think it suited the house more
than a contemporary look. Her attention
to detail was amazing.”
Best thing about having an interior designer?
“Victoria guided us through the entire project. She
could envisage the big picture and the project as
a whole, which was quite difficult for us.”

inner west. “Every minute detail, corner,
line was planned,” says Ziad, pictured
opposite with the couple’s daughter

materials artfully juxtaposed on the
home’s facade – the western red cedar
timber feature discreetly conceals a
garage entry – and at the back, below.
In full view of the kitchen and living
area, the yard is a sunlit play area for
Georgia, with the paved entertaining
area doubling as a mini bike track.

I
f you had to predict the future career of three-year-old Georgia,
it would be a safe bet to land on something within the design
or construction fields. It’s in the DNA of her parents, Lisa and
Ziad, just like their parents before them. “Both of us grew up
in families of builders and engineers,” explains Lisa. “It was
a constant influence in our lives, and has helped shape how passionate
we are about the process of creating a place to call home.”
The couple’s passion for craftsmanship and beautiful spaces is on
full display in their striking modern abode in Sydney’s inner west.
When they first bought the site and modest bungalow that sat upon
it, they were unsure of their next move. “I had never even heard
of the suburb before!” says Lisa. On Ziad’s coaxing, she pulled out
a map, and with an eye on its local village vibe and closeness to the
city, agreed it could be the perfect position to build a family home.
Compared to the pair’s previous city apartment, the site was
relatively generous. However, with the arrival of baby Georgia,
their needs took on a family-sized focus, so they engaged architect
Andy Macdonald of MiArchitects to optimise the space.
Incorporating four bedrooms and putting every available centimetre
to work, the design answered the brief with aplomb.
While the build may have run over schedule by six months, the
couple don’t regret taking the extra time. “Detail is in my veins,”
says Ziad, who would visit the site twice a week before work to go
through the decisions of the day to ensure it met his own exacting
standards. And it shows – every corner of the structure presents
a painstakingly planned, cleverly crafted feature.
As the home took shape, a distinct aesthetic emerged organically.
Layering concrete between the two floors had been a structural and
acoustic decision, but as the gyprock was about to line the ceilings,
Ziad suddenly called work to a halt. “I thought, ‘Why are we
covering up this beautiful, honest material?’” he recalls. The smooth,
solid surface now forms the downstairs ceilings, beside white walls,
custom timberwork and liberal lashings of black to form a muted
palette that appeals to the couple’s shared love of Japandi-inspired
design. “Those two aesthetics – Japanese and Scandinavian – give
you the most authentic looks in furniture,” says Ziad.
While Ziad was instrumental in the build process, Lisa, an interior
stylist and owner of Ziink Interiors, led the way with the decorating.
“We did a lot of shopping around,” she says “We’d like to think FLOOR PLAN

As a lover of white kitchens, it
took some convincing for Lisa
to embrace a scheme that had no
white whatsoever. “Ziad really felt
that we needed to go bold, and
he was right,” she says. The deep
and moody hues are brought to
life with the warmth of timber
cabinetry, and the textural look
of the Antique Brown in leather
finish granite bench tops from
CDK Stone. Ziad introduced
pockets of open shelving to
architect Andy Macdonald’s
concepts to break up the scene
and enable the couple to put
their personal style on display.
Seeking a statement piece worthy
of the spectacular ‘Aim’ pendant

couple engaged a furniture maker
to craft a 2.6-metre bespoke table
from solid American oak in a
black stain. “It was designed with
a central support base so that
the table legs wouldn’t get in the
way,” explains Ziad. The table is

AS THE OLD SAYING goes, don’t judge a book by its


cover – and that’s as true for kitchens as for pretty much
anything. Your moodboard may be bursting with images
of Carrara marble benches and satin-finish cabinetry,
but it’s what lies behind those sparkling surfaces that
really makes a kitchen work. From butler’s pantries to
high-tech lift systems, here’s everything your kitchen
needs to be as efficient as it is elegant.

Starting over
“When planning your new kitchen, it’s important to assess what
items you need to store,” says Blum marketing coordinator Sandi
Singh. Are you an avid entertainer with large platters that need
a home? Do you have cake tins of all shapes and sizes that never
quite seem to fit? Take an inventory, measure every kitchen item
you own, and then seek out storage solutions to suit.

Clever cupboards
Specialist cabinetry can be an ideal mess-saver. The easiest way to cut
benchtop clutter is an appliance cupboard to conceal commonly used
gadgets, such as the toaster, coffee machine and kettle, while keeping
them in reach. It’s a saviour if you don’t have room for a butler’s pantry
– just position it at the end of the bench (as pictured, right) so items
can be easily pulled out, kit it out with power points and conceal it
behind a roller door or concertina doors that won’t swing out too far.
As the ultimate hidden helper, a butler’s or walk-in pantry (below
right) can contain as much or little as space permits. As a guide,
eight square metres provides ample room for major appliances,
storage and prep zones. “If you like to hide mess, consider a second
sink and even a dishwasher,” says interior designer Lisa Santamaria
of Santamaria Design. “Fridge drawers are also a fabulous idea if you
want a bit more space but don’t necessarily need another fridge.”
For pantries both big and small, purpose-built sorting systems –
such as the Häfele ‘Tandem’ pantry unit, which attaches to the door
as well as the cupboard itself, or the Blum ‘Space Tower’ – ensure
everything is close at hand thanks to individual pull-outs.

Go with the flow


Smart storage will go to waste with an impractical layout, so carefully
consider the placement of your cabinetry and appliances – doing so
with the doors open – advises interior designer Darren Palmer, brand
ambassador for Häfele. Save space for a discreet bin drawer divided
into waste, recycling and compost, if required. Then work out how
much bench space you’ll actually need – if you have a large island,
can you get away with a full wall of cabinetry? If not, “extra cupboards
at the back of the island are always a good idea”, says Lisa.

Once you’ve locked in the general configuration of your kitchen, it’s
time to drill down into the details. The current trend for full-height
cupboards, as pictured in this GIA Bathrooms & Kitchens design
(below left), lends a streamlined look. Upper shelves, however, may
prove impractical without a clever lift system in place. “Internals can
be fitted with products that bring their contents down to eye level
and within arm’s reach,” explains Darren.
Similarly, lift systems are a great choice when it comes to selecting
overhead cabinetry (left). “Rather than right- or left-opening overhead
cupboard doors, the front moves up and away from the work area,
giving you optimal access to the cabinet interior,” explains Sandi.
From a safety point of view they’re also a better choice, reducing
the possibility of doors being left open at head height.
Corner voids can also be put to good use with the right internal
fit-out. Try the Blum ‘Space Corner’, which has extendable, angled
drawers so you can use every inch of available space, Hettich’s
‘Moving Corner’ or Häfele’s ‘LeMans II’ swing-out unit. “Kitchen
inclusions long lost at the back of blind corner cupboards easily
glide forward in line with cupboard doors, so you have access to
everything, visually and physically,” says Darren.
Compartmentalise drawers with internal dividers to help keep
everything in place. “There are so many clever drawer organisers,
such as custom utensil inserts, herb drawers, plate organisers and
pull-outs for bottles,” says Lisa. See the extensive range at Howards

something warmer than white. If space permits, kit out deep drawers
with secret inner drawers to better organise their contents and to
keep the kitchen streamlined, inside and out.

he nostalgia-inspiring sets of Mad
Men might have brought the phrase
‘mid-century modern’ back into the
common vernacular, but in truth, this is
an interior style that never completely fell out of
fashion. One of its hallmarks – and the reason for
its enduring appeal – is its focus on functionality.
“The principle behind many of the iconic
mid-century furniture designs was ‘form follows
function’, which simply means that the furniture
was designed for its purpose without unnecessary
features,” says Diana Ribarevski of Coco Republic.

sculptural forms are completely compatible with

texture was king when it came to 1950s interiors. “To me, texture is
more evident in good mid-century modern design than colour is,”
says Rhiannon Orr. “The attention to detail taken when working
with timbers and fabrics is second to none. Pattern is often injected
through the texture of the fabrics, or the grain of the timber.” Thus,
no mid-century palette is complete without timber – cherry, walnut
and teak dominated – and heavily textured fabrics, such as thick
wool knits, macramé and the ubiquitous shag-pile rug. >

THE WAYS OF COLOUR


Though the candy pastels of the 1950s and acid pops of the ’60s
dominate people’s perceptions, the primary palette of the era was
actually much softer and more natural, amplified by green vistas
through the period’s signature floor-to-ceiling windows. “If you
look at classic Australian mid-century homes, the dominant colours
were very much reflective of the landscape: warm timbers, natural
stone, earthy greens and burnt orange,” says Rebecca Pountney.
The dark neutral base is often punctuated by bursts of saturated
colour, reflective of the optimism during the post-war period.

THE KEY THING to remember when pursuing a mid-century scheme


is that bold hues shouldn’t overwhelm the look. “Even though mid-
century almost always involves an injection of colour, it’s never over
the top, and often it’s used in small bursts,” explains Diana Ribarevski.
“Sometimes an unexpected combination of colours can be used, and
other times they’re warm, earthy colours that blend together naturally.”

THE OPENING EPISODES of this year’s House Rules held a special


surprise. All seven teams, drawn from all over the country, combined forces
for a brand new challenge: to not only tackle the usual task of redesigning
an entire house in just seven days, but to do so to sell it on and – hopefully!
– profit from the deal. With the team that topped the leaderboard at the end
of the series set to win potentially hundreds of thousands of dollars, the
pressure was on to create something truly special.
The house, located in Sydney’s inner west, was renovated, extended
and styled for sale. The teams are usually designing with one of the other
contestants in mind, but this time their only guidance was a set of rules
supplied by judges Laurence Llewelyn-Bowen, Wendy Moore and Drew Heath.
Drawing inspiration from Australian art and artists – including legendary
20th-century designer Florence Broadhurst – the contestants delivered an
urban oasis from a relatively small footprint, generating plenty of living space
in clever and creative ways. All three judges agreed that the biggest hit of the
renovation was Queensland team Josh and Brandon’s elegant handmade
timber staircase. The tradie brothers’ work especially impressed HR judge and
Home Beautiful’s Wendy, who loved the vertical balustrade that the boys built.
The kitchen was also a success: It was a good, compact, urban kitchen,
thought HR Judge and architect Drew, who felt that the teams managed the
space constraints well. “The whole space is nice and busy,” he says. “It is kind
of like walking into a furniture showroom – in a good way. Because there’s just
stuff everywhere, and there’s a lot to look at. All the palettes work together.”

“It really is quite a functional
butler’s pantry, because it’s got
the laundry in there,” says judge
Wendy. “This is such a great
solution for a small house.
It allows the kitchen to feel like
a showpiece and part of the living
space, and still have the functionality
of all the storage that you need.” >

NURSERY Wendy felt that the nursery was an example of how to get
a lot of personality into a small room (top left & right). “It offered a bit
of flexibility,” she says. “They’ve got built-in wardrobes, which means
that the rest of the space is just for living, not for storage.” The compact
space offered up lots of quaint touches and accessories, such as this
chic adaptable ‘Rocky’ plywood cot from Lilly And Lolly and artworks

A MASTERPIECE OF elegance and efficiency, the main bathroom
in the Tweed Heads home of mother-and-daughter contestants Kim
and Michelle pays homage to the majestic and luxe look of Carrara
marble – and the practicalities of a large family.
Home to Kim and Michelle’s multi-generational family (that includes
kids, parents and grandparents), this room can get pretty busy at times.
House Rules judge and Home Beautiful’s Wendy Moore says the design has
a lot of great practical ideas suited to the demands of such a crowd. “They
did a really nice job of the layout,” says Wendy. “As it’s a family bathroom,
they made the decision to separate the toilet into another room and that
created a nice area for the shower, which was kind of tucked away. When
you’ve got so many people sharing the house, it’s a really good solution.”
The brief was to include marble and mint, and renovators Josh and
Brandon embraced the rules in a big way, lining all walls in a marble-look
porcelain tile, a look Wendy was a big fan of. “Marble works so well in
a bathroom and the way they used the marble concept was very simple,”
she says. “That punch of mint green in the sinks was also such a lovely
idea. The sinks have a lovely matt finish to them and they feel so good.
Having that finish and all that dark tapware at the sink, made it a really
tactile, inviting bathroom for the family.”

BATHROOM KEY IDEAS This bathroom has a nice and crisp design,
according to judge and interior designer Laurence Llewelyn-Bowen,
echoing Wendy’s comments about the great floor plan. The shower (top)
is slightly hidden away to create a private space, while the hero elements
of the room are undoubtedly the pastel ‘Eden’ round bowl sinks in Mint
from Highgrove Bathrooms (top right), which sit atop a white vanity and
create a contrast to the black tapware and romantic lighting in the form of
the ‘Pirouette’ eight-light pendant in Chrome with Crystal, from Beacon
Lighting. Practical niches for storage are given a boost with a feature inlay

was stripped right back to reveal the original
brickwork for a cool, industrial feel. The Norse
three-seater tan leather sofa from Matt Blatt
was chosen for its softness, with an Aether
fireplace from Aurora Suspended Fires
adding a sculptural mix of form and function.

FEATURE WALLS, creating a warehouse look with a New York flavour,


and the use of timber and brick were among the House Rules guiding the
makeover of Jess and Jared’s West Beach home in South Australia, so
taking the building back to its basic structure and letting original materials
play a starring role became the heart of the project. Cue tactile brick feature
walls, soft leather and recycled timber cladding in the living zone and kitchen,
all adding richness and rustic appeal to the finished result.
“The difficult thing about doing something like ‘New York warehouse’, when
you’re not in a New York warehouse, is to understand what architectural
features you can replicate and make them feel authentic,” explains HR judge
and Home Beautiful’s Wendy Moore, who felt the teams did a great job.
Another room that won design kudos was the bathroom, with its chic
palette of greys. “I loved it,” says homeowner Jess. “Compared to what
was there before, it was like stepping into a new world. My favourites were
the skylights and the large tiles, which made the room feel much bigger.”

IT CAN BE QUITE a challenge to design a home for two men –


especially if you wish to avoid the usual blokey stereotypes and unfriendly
surfaces. For the lads’ pad of music-loving Queensland brothers Josh and
Brandon, the House Rules teams managed to bring in a stylish edge
of country charm, while still making it perfect for the tradie duo.
A darker palette – including a muted mix of textural finishes in the
kitchen and tactile materials in the living zone – adds depth and character
to the scheme, while elements of timber throughout introduce warmth.
The highlight for the show’s judges was the bedrooms, particularly
Brandon’s ‘modern bushman’-themed room; a timber-clad feature wall,
touches of the homeowners’ requisite blue and orange colourway and
layers of natural materials all added up to create a comfortable haven
for the carpenters. “We all loved it,” says House Rules judge and interior
designer Laurence Llewelyn-Bowen. “It was absolutely a sense of taking
a rather clichéd thought and bringing it up to date. It felt extremely
Australian and very inspirational.”

floating timber floor unifies the open-plan space and helps to connect
the kitchen seamlessly with the neighbouring dining area (right), where
a sweeping wooden table delivers a note of country charm.

DESIGNING A HOME with a spectacular outlook and location – to


highlight the view without compromising on the house interiors – was the
challenge facing the House Rules contestants when they tackled Leigh
and Kristie’s Mornington Peninsula home, near Port Phillip Bay. With
a brief to create a mood of California cool and employing natural
materials, the teams devised a series of engaging spaces with a largely
neutral palette taking occasional sidesteps into show-stopping drama.
House Rules judges Wendy Moore, Drew Heath and Laurence
Llewelyn-Bowen all felt that the highlight of the renovation was the
kitchen, with its muted, textural tones and oversized island bench.
“I pretty much loved everything about that kitchen – it was just
awesome,” says judge and Home Beautiful’s Wendy. “It was a great
layout. It felt really spacious and part of the living room.”
Texture is the hero throughout the house, with earthy materials,
rustic finishes and tactile elements playing a starring role and adding
an element of coastal-influenced cosiness. The relaxed style and
warm colour scheme has been paired with carefully chosen green
accents to create a wonderful inside-outside flow.

KITCHEN The winning touch in the kitchen was the extension to


the island bench (opposite & right), Chadstone Oak, supplied by
Kinsman Kitchens. “It felt fantastic and it made a really modern
kitchen feel instantly organic,” says Wendy. “I loved the cabinetry.
I loved the long window. I loved the open shelving.” Fellow judge
and interior designer Laurence Llewelyn-Bowen felt the kitchen
worked well with the pantry. Both spaces, he says, had a very
strong relationship, with the dark tiles inside the pantry
offering a counterpoint to the stone of the island bench. >

or the foodies out there, the name Martin Boetz might ring a bell – the chef

F amassed a cult following during his 13-year stint at the Longrain restaurants.
Since then, Marty has escaped the bustle of the big smoke and taken on a new
adventure. In 2012, he stumbled across a property in the Hawkesbury Valley in
NSW and moved swiftly to snap it up. Set against a canvas of blue-grey gums, the farm
boasts breathtaking river views and, as Marty quips, “gives good shed”. With producers
of all kinds appearing in every corner of the region, it wasn’t long into his tree-change
that Marty thought to combine his new plot with his passion for food. And so, Cooks
Co-op was born! In an original web series, introduced by local producer Gerry Harvey

TWICE-COOKED BEEF RIBS WITH RICH TOMATO SAUCE
Serves 6-8

2L beef stock
6 cloves garlic, peeled, plus 2 cloves garlic, finely chopped, to serve
2 small brown onions
2 carrots
2 sticks celery
4 ripe tomatoes
60ml olive oil
1 stalk rosemary
½ bunch thyme
1 cup white wine
Salt and cracked black pepper, to season
1 piece beef short ribs (2kg)
2 tbsp tomato paste
1 cup flat-leaf parsley leaves, chopped, to serve
Zest of ½ orange

1. Preheat oven to 180C. Bring beef stock to the boil in a large


saucepan.
2. Chop peeled garlic, onions, carrots, celery and tomatoes into
uniform-size pieces. Heat oil in a large, heavy-based pot over
a medium to high heat. Add vegetables to pot. Caramelise the
vegetables, stirring continually.
3. Stir in rosemary and thyme then deglaze pot with white wine.
Add hot stock and bring to the boil. Season with salt and pepper.
4. Place ribs in a deep roasting pan and pour over stock and
vegetable mixture. Cover with a large sheet of baking paper and
foil. Braise for 2 hours or until meat on ribs is tender. Remove
ribs from liquid and set aside to cool.

chargrill plate until well caramelised. Place ribs on a serving plate

GOAT'S CURD CAKE WITH POACHED BROWN SUGAR PEARS
Serves 12

250g unsalted butter, room temperature,


chopped, plus extra for greasing
400g plain flour, plus extra for dusting
250g caster sugar
8 eggs
⅓ cup milk
2 tsp vanilla extract
1 tsp cinnamon powder
3 tsp baking powder
450g goat’s curd
250g sour cream

Poached brown sugar pears


1 vanilla bean, halved lengthways, seeds scraped
2 cinnamon sticks
¼ tsp ground nutmeg
2 cups firmly packed brown sugar
6 Packham or beurre bosc pears, peeled

1. Preheat oven to 180C. Grease a 24cm springform tin with butter


and dust with flour. Beat butter and half of the sugar with an
electric mixer until pale and creamy. Beat in 4 of the eggs, 1 at
a time, making sure they are all well incorporated.
2. Slowly beat in the milk and vanilla. In another bowl, sift flour,
cinnamon and baking powders, then gradually add to butter
mixture, beating slowly to make a batter.
3. Break up curd and place in a separate large bowl. Add sour cream
and beat with a wooden spoon until well combined. Beat in the
remaining sugar and remaining eggs, one at a time, until smooth.
4. Spread cake batter into prepared pan. Spread over base and
two-thirds of the way up the sides. Pour curd mixture into centre of
cake batter. Bake for 45 to 50 minutes or until a skewer inserted in
the centre comes out clean. Allow to cool in the pan on a wire rack.
5. While cake is cooling, make the poached brown sugar pears.
Place 1 litre of water in a large saucepan. Add vanilla bean and
scraped seeds, cinnamon sticks, nutmeg and sugar. Stir over
a medium to high heat until sugar dissolves. Bring to the boil.
Reduce to medium-low.
6. Add pears. Cook, partially covered, turning occasionally, for
20 minutes or until just tender. Remove saucepan from the heat.
Allow pears to cool slightly in syrup, turning occasionally.
7. Using a slotted spoon, transfer pears to a plate. Return syrup
to a medium-high heat and bring to the boil. Boil for 10 minutes
or until syrup has reduced by one third. Allow to cool.
8. Place goat’s curd cake on a serving plate and spoon over
some of the syrup. Serve pears (cut into quarters, if desired)
and remaining syrup with cake.
