Kitchen Hoods i rm Beis aa® Kitchen Hoods ae Engineering & Design Guide for Kitchen Ventilation Design Principles ‘The most prominent component a Kitchon ventilation systom isthe exhaust hood. The primary function ofthe hood ks to capture and exhaust the convective heat, smoke, grease vapors and other contaminants generated by the cooking process in order to provide asafe, heathy and comportable environment in the kitchen area itis a known fact that ho heated surtace of cocking equipment convects heat to air around it As this at warms up, the ak density decreases and i becomes lighter than the surrounding lr This lighter a ereates ay upward thermal current known as convection ow. The convection flow takes up the contaminants that are released during the cooking process and the surrounding air replaces the void created by the termal current as iustrated in Figure 1. Il the convective heat isnot removed directly above the cooking equipment, the contaminated a will spread throughout the kichen area and ‘even inside the restaurant. There wil be a continuous accumulation of contaminants on the nearest walls and on the celing Convection Flow (Contaminated Air) Surrounding Air ooking Equipment Surrounding Alt Figure 1: Contaminated air rising and replaced by the surrounding alr. Fight 0 a Kitchen Hoods Engineering & Design Guide for Kitchen Ventilation ‘AS the convection flow ses trom the cooking equipment’ surface, it expand in a certain degrea angle. To be able to capture by the exhaust hood the expanding convection flow, the hood must be extended on al open sides beyond the ooking equipment. It should be noted thatthe overhang distance willbe between the edge of cooking equipment and {the edge of inside opening of exhaust hood.
