Senior Chef

Your role

It is the Senior Chef’s (SC) responsibility to support the Head


Chef (HC) in managing the day to day operations of the businesses
kitchen in its entirety. It is their responsibility to assist &
be accountable in all matters of commercial interest in
association with the kitchen. This includes the delivery of
budget, health and safety, brand integrity, staff welfare &
development and customer satisfaction.

A SC is expected to assist the HC in the training & development


of all kitchen staff. To be a leader and role model to their
staff. To ensure the consistency of the Dodo product and service
is both managed and upheld in line with Dodo Pub Co branding &
Guidelines.

A SC’s primary role is to manage a quality kitchen service in


line with Dodo Pub Co standards. To meet and excel customer
expectations and at all times maintain and enhance the
reputation of the company. To manage staff on shift in the
absence of the HC.

and of the standard we expect from you

Have a clear understanding and confident execution of the kitchen


training modules

Have a clear understanding of opening & closing procedures

Understand what is expected from a good section set up

Understand and abide by food & safety laws

Understand your roll throughout your shift

Going above & beyond to make sure our customer have the best
experience when they visit our pub

Excellent interpersonal skill with your team & front of house staff
An Ability to cope under pressure, in a calm & efficient manner.

Be accessible to your team offering support and guidance.

Your Responsibilities

Assist in ensuring the kitchen is set up for service every shift

To manage a service to the standards we expect

Your opening and closing checklists are completed to the standard we


require

Ensure stock is correctly prepared and stored in line with company


standards

Follow our training modules

Wear agreed uniform & follow dress code.

Follow all reasonable instruction from your senior staff &


management

To attend all necessary training courses & staff meetings

To work within a team

To assist in creating a fun & hardworking environment to work in our


kitchen

Use the recipes books & reference cards at all times

Take ownership of your work and have pride in what we do

Follow our kitchen operating procedures (KOP)

Notify your line manager of any equipment damage

Ensure that the appearance and cleanliness of the kitchen and


storage areas is to company standard
To confidently manage a section during service.

Ensure you are the first to arrive for the shift & the last to leave

Assist the Head Chef with administrative / operating duties where


instructed, Such as stock taking, orders, events, staff training /
inductions, rota’s & budgeting, risk assessments etc

Constantly driving career development with your teams

To assist the Head Chef in keeping within the agreed stock levels.
