Detailed Project Report Setting up of Modern Abattoir CHAPTER 9 MAnpPower REQUIREMENT The proposed Abattoir would have 2 slaughter lines for GoatSheep and Bovines. According to market demand the animals slaughtered would be 350 goats per day and 105 bovines per day. The market demand is expleined in detail in the Meat Industry Review chapter. The Goat line has an installed capacity of 50 animals per hour and the number of hours of operation would reach 8 hours {includes one hour break) when the full market is catered to, given the market demand constraints, Only an expansion in demand would increase number of shifts further. ‘The Bovine line has an installed capacity of 15 animals per hour and the number of hours of operation would reach 8 hours (includes one hour break) when the full market is catered to requiring a full shift operation. Only an expansion in demand would increase number of shifts further. The Rendering Plant is expected to operate for 10 hours per day which is estimated based on the amount of Solid Waste generated. The details are explained in the Chapter on Auxiliary Plant and Equipment Chapter. It is proposed to run the Abattoir for 300 days in a year and the manpower allocation is planned accordingly. The manpower requirements (other than administrative & support) match the man: machine ratio and have been derived logically from the Process flow of Animal Slaughter by experts in Abattoirs. The administrative & support manpower follow the standards in other Abattoirs. The various roles of the other people are mentioned as below: Manager Production & Purchase - This is key person responsible for planning, scheduling and supervising the production from the Factory. For day-to-day operations he would coordinate with other managess and would be assisted by his team. The Manager Production and Purchase who would look after the procurement side i.e. engage with the 8-9 sellers to bring 40-60 Bovine, and 120-140 Goats per day to the abattoir. He would be supported by a Purchase Assistant. Beyond procurement, the responsibiity of the Manager Production js in ensuring the output of the abattoir in terms of the requisite no of carcasses in Praduction Mode as well as Service Mode. He would also be responsible for the delivery of the output to the various outlets including meat shops, hotels and restaurants. Manager Operation and Quality Assurance ~ The Manager Operation shall be in charge of the Plant and Equipment and along with Manager Production shall team «if for timely achievement of production deadlines. The Manager Operation and Quality Assurance would be responsible for multiple functions: (a) Maintenance of the Plant and Equipment (bj the Operation of All Services- Power, Water, Drainage, Effluent Treatment etc and (c) Housekeeping. He would be ably supported by a Maintenance Officer, a Operations Officer and a Housekeeping In charge. Quality Control and Quality Management shall be one of the most critical areas. The same has to be monitored and maintained as per International Standards and relevant Indian Standards. Manager Quality Assurance who would be responsible for ensuring HACCP (Hazard Analysis and Critical Control Points) camptiance of the entire system i.e., identification and prevention of microbial, chemical and other hazards in food production at determined check points. He would be responsible for Quality Audit of the entire system and obtaining necessary certification. Manager Accounts & Finance - The name itself is self-explanatory. The key personnel who shall spear head the operation of the Abattoir shall be part of this on job training, namely, Manager Production Manager Operation & Quality Assurance The working capital and other capital expenditure costs have been estimated keeping this extensive training schedule in mind. Similarly the no of Semi Skilled Workers (supporting the slaughter process) gradually increases from 20 to 24 {in the 5” year} and the no of cleaners increases from 8 to 10 correspondingly.
