CHEDDAR JALAPENO SKILLET MEATLOAF

INGREDIENTS
1kg ground meat (I like a mix of beef and pork but you can do all beef)
50g almond flour
2 jalapeños, minced
2 garlic cloves, minced
1 tsp cumin
1 tsp salt
1/2 tsp pepper
170g shredded cheddar cheese, divided

DIRECTIONS
1. Preheat the oven to 190 C.
2. In a large bowl, combine the ground meat, almond flour, jalapeños, garlic, cumin, salt, pepper, and 85g of the
shredded cheese. Use your hands to mix well together.
3. Spread the mixture evenly in a 10-inch oven-proof skillet (cast iron is best). Sprinkle the top with the
remaining shredded cheese.
4. Bake 25 to 30 minutes, until the loaf is firm and the center reaches 70C on an instant-read thermometer.
5. Remove and let cool a few minutes before slicing. Serving with toppings like sour cream, chopped cilantro, and
guacamole.
