Tools and Equipment Used in Food Processing

I. Introduction

The tools and equipments before using it must be already wash and sterilize to avoid bacteria from the
tools and equipment.We must sterilize our tools and equipments for food processing to make our foods
healty and to make our tools and equipment clean and no bacteria.After using the materials it must be
sterilize again and wash again.
II. Objectives
At the end of this exercise, students should be able:
To Familiarize with different tools and equipment used in food processing, and
To understand the different functions and uses of the different tools and equipment.

Stock Pot A stock pot is traditionally used
to make stock or broth, which
can be the basis for cooking more
complex recipes. It is a wide pot
with a flat bottom, straight sides,
a wide opening to the full
diameter of the pot, two handles
on the sides, and a lid with a
handle on top.
Cutting board A cutting board (or chopping
board) is a durable board on
which to place material for
cutting. The kitchen cutting
board is commonly used in
preparing food; other types exist
for cutting raw materials such as
leather or plastic.

grater A grater, also known as a


shredder, is a kitchen utensil used
to grate foods into fine pieces.

Mixing Bowls A mixing bowl is a bowl used for


mixing of ingredients. Round
bowls of varying sizes that are
used for combining food
ingredients when preparing
recipes. Mixing bowls are made
of plastic, ceramic, glass, copper,
and stainless steel that range in
size from 4 inches in diameter.
Peeler A peeler is a kitchen tool
consisting of a metal blade with a
slot with a sharp edge attached to
a handle, used to remove the
outer layer of some vegetables
such as potatoes, broccoli stalks,
and carrots, and fruits such as
apples and pears. A paring knife
may also be used to peel
vegetables
Strainer A kitchen device that is most
used to strain liquids away from
other ingredients but also to
ocassionally sift fine ingredients
away from larger ingredients.
The Strainer may be formed as a
spoon-shaped utensil or a basket-
shaped strainer from various
materials such as metal, nylon or
cloth
Measuring Cups A measuring cup or measuring
jug is a kitchen utensil used
primarily to measure the volume
of liquid or bulk solid cooking
ingredients such as flour and
sugar.

Spatula A spatula is a hand-held tool that


is used for lifting, flipping, or
spreading. Spatulas have a handle
that is long enough to keep the
holder's hand away from what is
being lifted or spread, as well as
away from a hot surface. The
blade of the spatula is wide and
thin.

Tong Tongs are a type of tool used to


grip and lift objects instead of
holding them directly with hands.
There are many forms of tongs
adapted to their specific use

Wisk whisk is a cooking utensil which


can be used to blend ingredients
smooth or to incorporate air into
a mixture, in a process known as
whisking or whipping. Most
whisks consist of a long, narrow
handle with a series of wire loops
joined at the end.
colander colander is a kitchen utensil used
to strain foods such as pasta or
rice or to rinse vegetables. The
perforated nature of the colander
allows liquid to drain through
while retaining the solids inside.
It is sometimes also called a pasta
strainer or kitchen sieve.

Kitchen Knife A kitchen knife is any knife that


is intended to be used in food
preparation.
Ladle A ladle is a type of spoon used
for soup, stew. a typical ladle has
a long handle terminating in a
deep bowl, frequently with the
bowl oriented at an angle to the
handle to facilitate lifting liquid
out of a pot or other vessel and
conveying it to a bowl.
Fork fork is a utensil, now usually
made of metal, whose long
handle terminates in a head that
branches into several narrow and
often slightly curved tines with
which one can spear foods either
to hold them to cut with a knife
or to lift them to the mouth
Slotted Spoon slotted spoon is a spoon
implement used in food
preparation. The term can be
used to describe any spoon with
slots, holes or other openings in
the bowl of the spoon which let
liquid pass through while
preserving the larger solids on
top
Frying Pan A frying pan, frypan, or skillet is
a flat-bottomed pan used for
frying, searing, and browning
foods. It is typically 20 to 30 cm
in diameter with relatively low
sides that flare outwards, a long
handle, and no lid.
Pork an object consisting of a round,
hollow part and a handle, used
for mixing, serving, and eating
food
Chinois conical, fine-mesh strainer, used
esp. for puréeing cooked foods It
is used to strain custards, purees,
soups, and sauces, producing a
very smooth texture.
Can Opener a mechanical device used for

food

the right quantity of something.

Weighing Scale A kitchen device used to measure
the weight of ingredients and
other food. Kitchen scales are
available in balance or spring
models. A balance scale will give
a more accurate reading than a
spring scale. Using a scale will
result in a more accurate
measurement of the ingredients
than by measuring it by volume.
Timer A timer is a specialized type of
clock used for measuring specific
time intervals. Timers can be
categorized into two main types.
A timer which counts upwards
from zero for measuring elapsed
time is often called a stopwatch,
while a device which counts
down from a specified time
interval is more usually called a
timer.

Thermometer A thermometer is a tool that


measures temperature — how hot
or cold something is.
Thermometers are used to see if
you have a fever or tell you how
cold it is outside. Made up of
thermo (heat) and meter
(measuring device), the meaning
of the word thermometer is pretty
straightforward
