POSITION SUMMARY:
Bartenders will be responsible to prepare and serve drinks to customers. able to mix and match ingredients
in order to create classic and innovative drinks in accordance with customers’ needs and expectations. The
purpose of this position is to interact with the Country Club guests and ensure they have a great experience
at the BAR.
Bartenders should maintain positive guest interactions while accurately mixing and serving beverages to
guests and servers in a friendly and efficient manner.
As a bartender at KMCC, you affect our guests’ view of our establishment every time you interact with
them. In order to foster regular clientele, consistency in quality, presentation and service is essential. It is
our goal to ensure our guests have their expectations exceeded each and every time they walk through our
door.

As a bartender, you have been hired for the purpose of not only serving our guests but entertaining them.
Do not share your life stories or opinions with our guests (no sex, religion or politics, at all, ever) Listen
to the guests and supply information as required. ie places that they can visit whilst at the KMCC. Your
main duties include preparing drinks for wait staff and guests, maintaining proper inventory and proper
portion control and also serving any tables within the bar and restaurant area.

Total guest satisfaction is the primary goal of each member of the KMCC team. In order to reach this goal,
a combination of teamwork and organization is necessary. This is shown through the ability of the staff to
coordinate and organize itself effectively.

 Welcome guests personally within 30 – 45 seconds of their arrival


 Endeavor to know regular guests by names, occupations, and favorite drinks
 Stop serving visibly intoxicated guests by offering a coffee or non alcoholic beverage
 Communicate with guests with enthusiasm and make them feel appreciated through displayed
actions
 No customers are allowed behind the bar
 Keep a check on the ice situation; tell management when there are 12 bags left.
 Make sure the your float has enough change (ie, float is not 4xR100 notes)
 Keep track of stock, tell management if certain lines are running low, in bar.
 Make sure you have enough glasses, and that they are polished.
 No bad language, no matter how friendly or otherwise the guest is
 Do not sit doing nothing. During this time report to your manager who will get you to assist in other
departments.
 The barman may not leave the bar area unless it is to re-stock, place food orders or to serve drinks
to the guests.
 Advertise major sport events on our board at entrance.
 Staff are not allowed to drink in the bar. If you are bought a drink you may only have this after hours.
Drinking on duty is viewed as very serious.
 No cell phones are permitted during working hours. In case of emergencies family and friends are to
contact reception.
 All lights to be switched off. DO NOT leave the store light on when you are not in the store.
 Should you not be able to work a shift, it is your responsibility to find a suitable replacement.

 Always let your Manager know if you are running late.
 You are to be honest and truthful at all times.
 Theft and unsociable behavior will result in immediate dismissal.
 Neither drugs nor alcohol are permitted during working hours. Visible after effects from heavy
drinking or late nights will not be tolerated.
 You are to represent the KMCC in a respectable manner at all times. Bringing the companies name
down in any way will have severe consequences.
 Your store is to be kept neat and in order.
 Serve snacks and drinks to the customer.
 Check identification of the guest to make sure they meet age requirements for purchase of alcohol.
 Mix ingredients to prepare cocktails and other drinks.
 Mix drinks, cocktails and other bar beverages as ordered and in compliance with KMCC standard
drink recipes.
 Arrange bottles and glasses to make attractive displays.
 Assess customers’ needs and preferences and make recommendations
 Ability to Sell or influence others for up selling and suggestive selling.
 Provide recommendations and suggestions to guest for choosing Drinks and Snacks.
 Serve customers in a friendly and helpful manner.
 Keep the bar counter and work area neat and clean at all times.
 Demonstrate a thorough knowledge of food and beverage products, menus and Promotions
 Handle and move objects, such as glasses and bottles, using hands and arms.
 Clean up after customers and clean work area.
 Clear ashtrays as and when required.
 Maintain a clean working area by sweeping, vacuuming, dusting, cleaning of glass doors and
windows, etc. if required.
 Collect payment for drinks served and balance all receipts.
 Prepare inventory requisitions as needed to replenish supplies.
 Ensure that the assigned bar area is fully equipped with tools and products needed for Mixing
beverages and serving guests.
 Stay guest focused and nurture an excellent guest experience
 Comply with all food and beverage regulations
 Perform Other duties as and when assigned management
 You are to adhere to the KMCC COMPANY DISCIPLINARY CODE at all times

Bar Opening Duties


 Perform section check
o Wipe down tables and chairs
o Set tables with standard tabletop items
o Ensure all table top items are clean and organized
o Turn on TVs -- sports or Discovery
o Turn on music – appropriate music and volume level
o Ensure lighting is on and at appropriate level for the day (no burnt out light bulbs)
o Ensure all prints, mirrors and surfaces are clean and dust free
 Ensure all fridges are clean (inside and out) and stocked
 Fill water jugs and ice buckets
 Make sure you have lemons, clean knife and cutting board.
 Count cash till and ensure correct balance

Bar During Shift Duties


 Ensure there are ashtrays in the braai area and that they are cleaned regularly. Waitresses will
assist in this but it is essentially the duty of the bar staff to keep this area clean and tidy regarding
bar paraphernalia.
 Serve customers, take payment etc.

 Work in collaboration with other bar staff to keep the bar area cleaned; and stick to company’s
standards at all times.
 Responsible for mixing and serving both alcoholic and non-alcoholic drinks for patrons of bar and
dining room following standard recipes and procedures
 Receive cash payment from guests and give them change when appropriate
 Arrange glasses and bottles to maintain an attractive display in agreement with bar standards
 Reach out to guests and offer assistance to them before they request for it
 Count drinks served to guests, track slips in table numbered glasses
 Anticipate guest’s needs and follow the “Half-full” rule when offering another drink
 Be at full alert to guest signals, such as when they are raising their hands or looking directly at you,
for orders

Bar Closing Duties


 Stock bar fridges (beer, wine, juice, water)
 Restock bar service items napkins, toothpicks, straws etc.
 Wipe bar counter including the liquor bottles
 Empty all garbage and replace with new bags
 Spray & wipe front of bar fridges
 Spray & wipe top counter of bar fridges
 Spray & wipe top of bar
 Cover lemons and put in bar fridge
 Turn down T.V.’s and turn music off
 Close out all tabs
 Complete Stock issue sheet

Dress code:
 You are to dress neat and tidy at all times
 For special events you will be required to wear black pants and a white shirt.
 Hair to be kept neat and tidy
 No earrings to be worn by males
