CHAPTER III

TECHNICAL STUDY

This technical study of a feasibility assesses the details of how you will

deliver a product or service. It determines the feasible combination of

manufacturing process, labor requirements, machinery designs, materials to be

used, utility requirements, plant location and layout, and other technical factors

that will enable a project to operate at minimum cost and/or maximum profit. In

some regards, it serves as a flow chart of how products and services evolve and

move through the business to physically reach the market.

Product Description

KingFC is a brand of fish cake that will satisfy customer’s cravings for fish

and potatoes. It is named KingFC (king fish cake) because it aims to bring

delicious fish cake fit for a king and at the same time affordable delights for

everyone.

The product is mainly composed of boiled potatoes that are mashed to

make a base that will serve as the patty of the cake. Fish flakes and corn kernels

are then added to the potato base to form a mixture. This mixture is then molded

into tiny ovals and then dipped into a battered egg and bread crumbs. These tiny

ovals are deep fried until golden brown. KingFC will offer different tastes and

variations of this fishcake. The original fish cake recipe can be modified with

different ingredients, either by using bangus, tilapia, tuna or galunggong as part

of its filling. It will be served with variety of sauces and refreshments.


These fish cakes are made for the consumption of the customers to

relieve them from their hunger in a very convenient and affordable way.

Students, kids and regular persons are the ones that are mainly targeted by this

product since they comprise a large part of the society.

• Add salt and pepper
• Add Corn kernels
2. Filling
• Boil boneless bangus (relleno style) then flake when
ready
• Fry tilapia then flake when ready
• Fry tuna then flake when ready
• Fry galunggong then flake when ready

3. Main preparation
• Mix base with filling
• Refrigerate for about 15 minutes
• Take about 2 tablespoon of the mixture then mold it into
a patty shape
• Dip molded mixture in egg then cover it with
breadcrumbs
• Deep fry until golden brown

Raw materials will be purchased at Farmers Plaza, a market near

Araneta-Center LRT Station. This will be done by pick-up and will be paid by

cash upon buying. Purified water and bottled water will be delivered by Aqua

Best a Water station near the business location and paid by cash on delivery.

After the raw materials (ingredients) are made available, sanitation is necessary.

All staffs are required to wear complete, proper and clean kitchen wears. All

equipment and machineries to be used must also be kept clean to comply with

strict sanitation policies. Cooking of food comes next. Food will be prepared

according to the daily demand. Before the fish cake is served, it must be

presented in good form. There will be a daily 20 safety stocks of fish cakes to

avoid waiting time of the customers. First-in, First-out (FIFO) inventory will be

maintained.

The food stall shall be located in Araneta Center-Cubao LRT station which

is in Epifanio de los Santos Avenue, Barangay. Socorro, Cubao, Quezon City. It

will be placed along with existing stalls, before the passenger’s entrance to

platform and ticketing booths. The proponents choose Araneta Center-Cubao

LRT station due to its location at Araneta Center which is home to popular

shopping malls such as Gateway Mall, Ali Mall and Farmers Plaza. The Araneta

Center complex is also home to the Philippines' biggest stadium and concert

venue, the Smart Araneta Coliseum. The station is also the transfer point for

commuters riding the Manila Light Rail Transit System Line 2, or LRT-2. LRT

commuters can drop by at KingFC stall to ease their hunger in a convenient way.

Business Layout

The total area of the space in LRT Araneta-Center Station is measured by

8 by 9 feet. The proponents rent the space and customized it to a food stall. The

stall has storage cabinets for the supplies for the business and a glass food

display for effectively presenting the fish cake for sale and keeping it in good

condition. Also, the water and electrical system of the stall was also included in

the design of the stall since some of the equipment will use electricity to function.

Production Schedule

Production of fish cake patties is presented in this section. Ingredients

play an essential role in the production. Fish serves as the main ingredient of our

fishcake so it is very important to maintain and preserve its freshness. Since we

want what’s best for our highly-valued customers, production of fish cake patties

will be every Saturday of the month as well as fishes buying time to make sure

that it is fresh. Other ingredients that are not perishable and could last longer will

be bought every first Saturday of each month. Other steps in the production of

patties are presented in the figure 41. After patties are made it will be stored in

the freezer to preserve it until ordered. It will be deep fried and serve to our

valuable customers.

Employee Uniform

In the conduct of business, employees are provided with specific uniform

to wear. These uniforms are specially crafted for the operation of business and

outsourced from a supplier. The figure below shows the design and style of the

uniforms. They are required to wear this when they are on duty. The organization

provides a free one set for every employees and to be charged as an expense

for the year. Any request for new set of uniform will be a deduction to their salary.

Labor Requirements

Manpower is an essential aspect of any business. People are the ones

who start and manage the proposed business. The effectiveness and efficiency

of an entity depends on how well the people involved in the operations are

designated to their respective positions. KingFC will be needing full time and on

call employees who will do the operation processes. Total of 7 (seven)

manpower would be needed for our production namely, Store Manager (1),

Cashiers (2), Crew (4). They will be responsible in performing the following

positions:

Work Schedule

 Store Hours: the stall is open from 6:00 AM to 10:00 PM, Mondays up to

Sundays.

 Hours of operations: 18 hours

 There will be one hour allotted for preparation to open and to close.

 Employees will work nine hours each every work day with 1 hour break.

 Employees will have two days day off each.

 Employee must be complete during Saturdays because production of fish

cake patties will be done every Saturdays and stored in the fridge, so that it

will be ready for deep frying when customers order.

Utility Requirements

A. Electricity

Electricity plays an important role in the operation of business.

Some appliances to be used in the conduct of business are electrically

operated. The stall must be provided with good lighting in order for

customers to feel comfortable while they are in.

B. Water

In the preparation of products to be offered, the business will use

water to operate the business. Also, the business will provide a hand

washing area for employees and customers. Some of the drinks offered

by the business are crafted in the stall and it will use separate source of

water in the making of these beverages. The utilization of water also

helps to assure the maintenance of cleanliness and proper sanitation of

the stall.

C. Gas

Gas is the major utility to be used in the operation of business.

The preparation of main product is done through the use of gas

specifically in the form of Liquefied Petroleum Gas (LPG). LPGs are

outsourced from dealer around the location of the business. The cost of

gas is ₱800 each, 1 gas tank is needed every month so total annual cost

of gas is ₱9,600.

Total Project Cost

The items included in the project costs were the fixed assets purchased at

the start of the business operation, including the input VAT paid to these assets.

Purchases of initial inventories were for two weeks, purchases of kitchen and

safety supplies were for initial year, purchases of office and sanitary supplies and

payments of operating expenses were for two month operation of the business

and the input VAT corresponding to these purchases and payments. Working

capital was used as the revolving fund of the company.
