EMGT 361 PROJECT

RESTAURANT
By Stu Dixon, Srinivas Ponugupaty, Zaki Sari, Dustin Trinkle

Executive Summary
Far too often being a college student at the University of Missouri-Rolla does one hear
"There is nothing to do here." It is for that reason that our group has taken on the business
enterprise of opening a new restaurant/bar that caters to the college crowd. There are a few
restaurants and bars around town, however, most of them seem to target members of the
community more so then college students as their prime consumer base. At none of these
institutions do you see photos of the UMR football team, banners illustrating academic success,
or even a UMR logo. At all larger public schools restaurants and bars seem to cater to the college
crowd, which seems to give the students more of a sense of school pride. This is evident even at
some smaller schools such as Southern Illinois, through a contact we were able to learn that a
restaurant named after the school mascot was able to profit one thousand dollars per business
day, and that the majority of the restaurant's patrons were college students.
Once our group realized what business venture we wanted to take on the next step was
figuring out how we were going to do it. First we wrote up a proposal illustrating that we had
decided to use a functional work breakdown structure that would be composed of five major
functions: architecture, marketing, human resources, administration, and accounting. Finally
through some research and brainstorming we determined all of the tasks that would be necessary
to complete prior to the grand opening of our restaurant. Then the entire group met and allotted
certain amount of time and money for each task, determined who (in our fictional WBS) would
work on what task, and what order they needed to be completed in. From this data we were able
to construct a table, as well as, a Gant chart showing exactly what needed to be done, when it
needed to be done, who was going to do it, how much time they had to do it, and how much
money they could use to do it. With all of this done, now everything is laid out and ready to
begin construction of our new restaurant. Our restaurant will cost $408,000 and needs 16 months
to be accomplished.
We have planned and laid out everything necessary to begin this business venture and all
the resources necessary to begin this project are provided later in this report. It is our belief that a
new restaurant within a close proximity to the campus that catered to the college crowd would be
a great success among college students, and maybe even help build some school pride amongst
UMR's students.
