Capsaicin
The important substance in chili peppers is capsaicin, which gives the peppers a spicy flavor.
Capsaicin is a phenolic compound found naturally in chili peppers. Most are in the area of the white
core, or "placenta". The flesh of the peppers, peels, and seeds contain very little capsaicin ( แคปไซซิน
คืออะไร, 2017). Capsaicin is a neuropeptide releasing agent selective for primary sensory peripheral
neurons. Therefore, applying a large amount of capsaicin can cause the skin to be blue-ish, severely
inhibited breathing, cause convulsions, and possibly eventual death, (phytochemical, n.d.).

Properties
The capsaicin is a solid compound, and it is a white crystalline powder. The pure capsaicin is
odorless but capsaicin highly volatile with a pungent odor. The taste of capsaicin has a burning
taste. The boiling point of capsaicin at 410-428 °F, the melting point at 149 °F, and the flashpoint at
235 °F. Capsaicin is insoluble in cold water, but soluble in alcohol, ether, and benzene. When it
heated to decomposition, it’ll emit toxic fumes of nitrogen oxides (Capsaicin, n.d.).

The Application
The chili that contains capsaicin is used in medicated creams and lotions to relieve muscle or
joint pain. It has also been used to reduce the blood sugar level of diabetic patients and reduce the
blood fat in triglycerides, phospholipids, and cholesterol. Moreover, chili is used in the food products
to provide added spice or heat because of the capsaicin. Capsaicin is also used to speed up the

Caffeine
Caffeine is found in seeds, fruits, or leaves of many plants that are native to Africa, South
America, East Asia. In which it will act as a private insecticide for that plant and helps to prevent the
germination of other seeds that come near (Will Caffeine Affect Plant Growth, 2020). Caffeine is in
coffee, tea, chocolate, energy drinks, or even in soap, shampoo, toothpaste. Caffeine acts as a
central nervous system stimulant. When it reaches the brain, the most noticeable effect is alertness
which made humans feel more awake and less tired. Moreover, it is also a neurotransmitter and has
an addictive effect and it provides no nutritional value on its own (Cherney, A. P. and K, 2018)

Properties
The caffeine is a solid compound, it is a dry white crystalline powder. It is odorless and has a
bitter taste. The boiling point of caffeine at 352 °F, the melting point at 420 °F. The pH of caffeine is
6.9 which is acidic. The compound can be soluble in water, and the aqueous solution of caffeine
salts dissociate quickly (Caffeine, n.d.).

The Application
Caffeine is used in the medication which treats tiredness and drowsiness. It also improves
the effect of some pain relievers. Caffeine is also used in food products to help restore mental
