Serves 4 1. Heat the oil in a pan over a medium heat and cook the

TOP HALLOUMI TIPS
Halloumi is best prepared in 3cm slices; any
thinner and it will fall apart.
Grilling or panfrying halloumi gives it a beautiful
golden crust and adds flavour.
If you’re cooking halloumi on a nonstick pan there
is no need to add oil.
As a beautiful salty cheese, halloumi particularly
suited to cooking on the barbecue. Marinate your
slices in a generous glug of olive oil with chilli
flakes and fresh garlic before grilling to give it
extra flavour. Once cooked, return the slices to the
marinade for an extra kick and glossy appearance.

SIZZLE INTO SUMMER
Having given it considerable thought we can’t think of
anything that doesn’t taste better cooked on the BBQ.
Whether you’re a professional pitmaster or an

enthusiastic amateur, the key to a successful BBQ
lies in the prep. Work out realistically how much each
person will eat – and then generously up it because
no one can resist that extra burger/sausage/steak/
salmon darne/halloumi slice.
Make sure the coals have stopped smoking before

you start grilling, and have a list of how long things
take to cook as per the instructions on the packet. If in
doubt, give it an extra few minutes and have a trusted
second-in-command to hand you the cheese singles
and make sure the brioche buns aren’t burning.
When it says ‘marinade for a few hours or preferably

overnight’ always go for the latter, which adds real
depth of flavour, and never, ever skimp on the garlic.
Don’t limit yourself to the usual suspects – King

Prawns, tofu, cucumber, peaches, avocados and
choccy bars wrapped in tortillas (no really!) all go
brilliantly on the barbie.

EQUIPMENT
Blender
INGREDIENTS
Serves 4
1 bottle rosé
1⁄2 watermelon,
flesh removed
Juice of 1 lemon
2 tbsp caster sugar
METHOD
Blend the rosé with the watermelon, lemon
juice and sugar. Place into a tray and then
into the freezer. Allow to freeze for at least
3 hours or overnight then blend again, serve
in glasses.

ULTIMATE ICEBERGER
INGREDIENTS METHOD
Serves 6–8 1. In a small saucepan, heat the berries, lemon
juice and sugar to boiling point. Simmer for at
100g frozen berries
least 3 minutes. Set aside to cool.
2 tablespoons lemon juice
2. Preheat a (fan) oven to 170 degrees Celsius. Line
2 tablespoons caster sugar a baking tray with greaseproof baking paper.
50g butter 3. Whisk the butter and remaining sugar together
100g sugar until light and fluffy, then beat in the egg, then
1 egg finally the cocoa powder and flour. Beat until
you have a stiff dough. Roll out the dough and

place onto a lined tray.

4. Bake in the oven for 15 minutes. Remove from
500ml block of vanilla the oven and allow to cool slightly. Using a
ice cream serrated knife, cut the biscuit into 5cm x 9cm
rectangles. Allow the biscuits to cool fully.
5. Cut a slice of ice-cream to fit the biscuit. Spoon
on the cooled raspberries coulis on top and top
with the second piece of biscuit. You can see
that the raspberries ooze over the top and down
the sides of the cake, which is a great contrast
with the creamy vanilla ice cream.
6. Place on a lined tray and return to the freeze, to
keep the ice cream from melting. Then wrap in
greaseproof paper, twist each end and refreeze
as little parcels.
