Chatpattay Dahi Baray

Prepare Mong Daal Phulkiyan:

-Mong daal (Yellow lentil) 1 & ½ Cup (soaked for 30 minutes)

-Water ¼ Cup or as required

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Zeera (Cumin seeds) roasted & crushed 1 tsp

-Kali mirch powder (Black pepper powder) ½ tsp

-Namak (Salt) 1 tsp or to taste

-Prepared hari chutney 2-3 tbs

-Cooking oil for frying

-Lukewarm water as required

Prepare Amchur ki Chutney:

-Cheeni (Sugar) 1 Cup

-Amchor powder (Mango powder) 1/3 Cup

-Saunf (Fennel seeds) crushed 1 tsp

-Chaat masala 1 tsp

-Zeera (Cumin seeds) roasted & crushed 1 tsp

-Kali mirch powder (Black pepper powder) ½ tsp

-Garam masala powder ½ tsp

-Kala namak (Black salt) ½ tsp

-Namak (Salt) ¼ tsp or to taste

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Zarda ka rang (Yellow food color) 1-2 pinch

-Water 1 Cup or as required

Prepare Hari Chutney:


-Podina (Mint leaves) ½ Cup

-Hara dhania (Fresh coriander) ½ Cup

-Lehsan (Garlic) 4-5 cloves

-Hari mirch (Green chillies) 3-4

-Lemon juice 3 tbs

-Namak (Salt) ¼ tsp or to taste

-Nimco sev 1 & ½ tbs

-Water 2 tbs or as required

Assembling:

-Daal phulkiyan

-Dahi (Yogurt) whisked

-Tamatar (Tomato) chopped

-Pyaz (Onion) chopped

-Hara dhania (Fresh coriander) chopped

-Lal mirch (Red chilli) crushed

-Amchur ki chutney

-Hari chutney

-Dahi (Yogurt) whisked

-Tamatar (Tomato) chopped

-Papri

-Nimco Sev

-Hara dhania (Fresh coriander) chopped

-Lal mirch (Red chilli) crushed

Directions:

Prepare Daal Phulkiyan:


-In a blender jar, add yellow lentil, water and blend well until smooth.

-Take out in a bowl, add red chilli powder, cumin seeds, black pepper powder, salt, 2-3 tbs prepared green
chutney (reserve for later use) and mix continuously for 4-5 minutes.

-In a wok, heat cooking oil and fry phulkiyan on medium flame until golden brown.

-In a bowl, add lukewarm water, daal phulkiyan and let them soak for 30-40 minutes, take them out, press and
squeeze excess water.

Prepare Amchur ki Chutney:

-In a wok, add sugar, dried mango powder, fennel seeds, chaat masala, cumin seeds, black pepper powder,
garam masala powder, black salt, salt, red chilli powder, yellow food colour, water, mix well and bring it to boil
and cook on medium flame for 8-10 minutes and keep mixing in between.

-Let it cool.

-Can be stored in refrigerator for up to 1 month.

Prepare Hari Chutney:

-In a spice mixer, add mint leaves, fresh coriander, garlic, green chillies, lemon juice, salt, nimco sev and water,
blend well & set aside.

Assembling:

-On a serving dish, add dumplings, yogurt, tomato, onion, fresh coriander, red chilli crushed, amchur ki
chutney, hari chutney, yogurt, tomato, papri, nimco sev, fresh coriander, red chilli crushed & serve!
