healthier living and a healthier you. The Atkins Diet isn’t simply a
way to lose weight; it’s a way to change your life, starting HERE and
NOW! Remember: if you’re here, you’re trying to consume as few
carbohydrates as possible. Many foods do have carbohydrates in
them, even healthy foods, so always keep an eye on what you’re
eating and remember the importance of portion control. When you’re
cooking these foods, make sure all the ingredients you’re putting into
them don’t have any carbs whatsoever. Are you ready to get back in

Zero Carb Asian Barbecue Spare Ribs

Salt and pepper to taste


½ teaspoon Accent seasoning
3 tablespoon soy sauce
4 pounds pork ribs

Combine the seasonings and the soy sauce in a bowl. Rub the
mixture all over the ribs. Place the ribs in a baking dish and cover in
foil. Bake for 3 hours at 250 degrees.

Zero Carb Asian Beef On A Stick

½ pound flank steak


½ cup soy sauce
½ teaspoon Accent seasoning
1 teaspoon pepper
Cut the steak into strips. Combine the soy sauce, Accent, and
pepper in a bowl. Place the steak into the bowl and let sit overnight.
Before using skewers, soak in water for 20 minutes. Skewer the
steaks and cook on a grill on medium-high heat to desired doneness.

Zero Carb Asian Chicken Wings

2 tablespoons soy sauce


1 tablespoon vinegar
Salt and pepper to taste
¼ teaspoon Accent seasoning
2 tablespoons peanut oil
1 pound chicken wings

Combine soy sauce, vinegar, salt, pepper, and Accent in a bowl. Oil
the bottom of a casserole dish and place the chicken in the dish.
Pour the mixture all over the chicken. Bake at 350 degrees for 20
minutes or until desired doneness.

Zero Carb Bacon Cheese Ball

8 ounces carb-free spreadable cheese, your choice


Salt and pepper to taste
1 cup shredded carb-free cheese, your choice
5 ounces crumbled bacon

Mix the spreadable cheese until whipped. Add the salt, pepper, and
shredded cheese. Add the bacon to the mixture and mix well. Form
the mixture into a ball. Refrigerate and serve when firm.

Zero Carb Bacon Wrapped Scallops

3 jumbo scallops
6 strips bacon, browned but pliable
Salt and pepper to taste
1 tablespoon olive oil

Season the scallops with the salt and the pepper. Wrap two strips of
bacon around each scallop, securing it with kitchen twine. Heat up
the oil in a skillet and sauté each scallop until desired doneness.
Remove the twine and serve on a warm plate.

Zero Carb Beef Jerky

1 pound flank steak


3 cups soy sauce
Pepper to taste

Cut the flank steak against the grain, diagonally, into bite-size
chunks. Combine the soy sauce and pepper in a large bowl. Place
the beef chunks into the mix, and let marinate for an hour, or
overnight, if preferred. Place meat into a dehydrator and let dry for
24 hours. Store in a cool, dry place.

Zero Carb Beefy Cheese Dip

Or maybe I should call it “Cheesy Beef Dip.” Either way, feel free to
tweak the ratios of ingredients to your liking.

1 pound ground beef, cooked and drained


½ teaspoon vinegar
8 ounces carb-free spreadable cheese, your choice
Salt and pepper to taste

In a bowl, mix the beef and the vinegar. Add in the cheese and mix
until slightly whipped. Add the salt and pepper. Let refrigerate, and
serve when firm.

Zero Carb Bleu Cheese Bacon Dip

Or “blue cheese” if you’re not French. If you’re not a fan of bleu


cheese, you can use less.

8 ounces crumbled bacon


4 ounces carb-free bleu cheese, softened
Pepper to taste.

Combine the cheese and bacon. Mix until slightly whipped. Add the
pepper, refrigerate, and serve.

Zero Carb Boneless Buffalo Chicken

I think boneless is the best way to go for Buffalo chicken. I actually


do like wrangling with the bones in wings. It’s kind of fun and it’s like
hunting for treasure. But for something spicy like Buffalo, I like to just
go for it and eat the whole chicken chunk at once, like eating a hot
pepper.

2 pounds boneless chicken wings
1 tablespoon olive oil
Salt and pepper to taste
⅔ cup hot sauce
½ cup butter

Cover the chicken with the oil, then season with the salt and pepper.
Place the wings on a baking sheet and bake at 400 degrees for 40
minutes. Meanwhile, combine the hot sauce and butter in a small
saucepan until melted and combined. When the wings are done
baking, brush the wings with the sauce. Return to the oven and cook
for five to ten additional minutes

Zero Carb Buffalo Chicken Wings

2 pounds chicken wings


1 tablespoon olive oil
Salt and pepper to taste
⅔ cup hot sauce
½ cup butter

Cover the chicken with the oil, then season with the salt and pepper.
Place the wings on a baking sheet and bake at 400 degrees for 40
minutes. Meanwhile, combine the hot sauce and butter in a small
saucepan until melted and combined. When the wings are done
baking, brush the wings with the sauce. Return to the oven and cook
for five to ten additional minutes

Zero Carb Butter Parmesan Dip

Consider this something of an Alfredo alternative. If you need more


or less, the recipe scales up and down very well.

1 stick butter
½ cup shredded carb-free Parmesan
Pepper to taste
In a small saucepan, melt the butter. Add the Parmesan and pepper.
Cook on low and stir until blended. If desired, cook more to reduce.
Serve in a bowl.

Zero Carb Cheesy Chicken Balls

1 pound shredded chicken, cooked and drained


½ teaspoon vinegar
8 ounces carb-free spreadable cheese, your choice
Salt and pepper to taste

In a bowl, mix the chicken and the vinegar. Add in the cheese and
mix until slightly whipped. Add the salt and pepper. Let refrigerate,
and serve when firm.

Zero Carb Cocktail Meatballs

It’s weird how “cocktail” just means “tiny” in culinary terms. Whatever
the case, these meatballs are cute and delicious.

1 pound ground beef


1 egg
Salt and pepper to taste
Olive oil

Combine the salt, pepper, egg, and ground beef in a bowl. Mix well
with your hands. Form the meat into small balls, about a half inch in
diameter. Oil the bottom of a baking sheet, arrange meatballs, and
cook at 350 degrees for 10 minutes or to desired doneness. You
may have to make several batches.

Zero Carb Corned Beef Swiss Roll-Ups

It’s like a Reuben, but less so.

½ pound corned beef, sliced


¼ pound carb-free Swiss cheese

Lay out a slice of corned beef, and place a piece of Swiss on top.
Roll these up tightly, then secure with a toothpick. If desired, place
on a baking sheet and cook at 350 degrees for 10 minutes.

Zero Carb Crab Dip

2 cups flaked crab


2 tablespoons mayonnaise
2 drops liquid smoke
1 teaspoon horseradish
Salt and pepper to taste

Mix all ingredients in a food processor until desired consistency is


reached.

Zero Carb Cuban Roll-Ups

“Cuban” as in “Cuban mix sandwich.” If you’re familiar with that,


you’ll know it’s a popular meal in Florida, full of all kinds of tasty
meats.

¼ pound roast pork, sliced


¼ pound roast beef, sliced
¼ pound carb-free Swiss cheese
Mayonnaise and mustard to taste

Lay out a slice of roast beef. Add mayonnaise and mustard, then top
with a slice of roast pork. Place a slice of Swiss on top, roll tightly,
and secure with a toothpick. If desired, bake in an oven at 350
degrees for 10 minutes.

Zero Carb Devilled Eggs

6 boiled eggs, peeled


¼ cup mayonnaise
1 teaspoon yellow mustard
1 teaspoon vinegar
Salt and pepper to taste

Cut the eggs in half lengthwise. Remove the yolks and place them in
a bowl with the other ingredients. Mix thoroughly. Spoon the mixture
into the egg halves. Garnish with paprika.

Zero Carb Dijon Mustard Dip

1 cup Dijon mustard


¼ cup mayonnaise
Pepper to taste
Combine all ingredients in a mixing bowl and mix well. Refrigerate
and serve.

Zero Carb Drawn Butter

½ pound butter

Place butter in a saucepan and bring to a boil. Remove from heat


and let sit. The solid milk will rise to the top. Skim it off and pour the
remaining butter into a container.

Zero Carb Fried Chicken Tenders

1 pound chicken breast tenders


Salt and pepper to taste
1 egg, beaten
1 cup crushed pork cracklings

Season the tenders with the salt and pepper. Dip them in the egg,
then dredge in the cracklings. Place on a baking sheet and cook for
20 minutes at 400 degrees, or until done. Turn once during cooking.

Zero Carb Ham And Swiss Roll-Ups

½ pound baked ham, sliced


¼ pound carb-free Swiss cheese
Lay out a slice of ham, and place a piece of Swiss on top. Roll these
up tightly, then secure with a toothpick. If desired, place on a baking
sheet and cook at 350 degrees for 10 minutes.

Zero Carb Mozzarella Pepperoni Kabobs

When finished, these will look kind of like a melty, tasty, cheesy
sausage.

¼ pound zero-carb pepperoni slices


¼ pound zero-carb mozzarella cheese, cut into pepperoni-sized
slices
On a metal skewer, layer the pepperoni and mozzarella alternately,
making sure to keep them tightly together. place on a baking sheet
and bake for 10 minutes at 350 degrees.

Zero Carb Pickled Eggs

When you’re making this recipe, make sure that the jar you’re using
is very clean. If there’s any bacteria in the jar when you let it sit, it’s
going to reproduce and ruin the eggs. You might want to just fill the
jar with very hot boiling water to kill any and all bacteria.

1 dozen peeled boiled eggs


4 cups vinegar
Salt and pepper to taste

Carefully place eggs in a large jar, then fill with vinegar, salt, and
pepper. Seal and let sit overnight.

Zero Carb Pork Balls

1 pound ground pork


1 egg
Salt and pepper to taste
1 tablespoon olive oil

In a bowl, mix the pork, beef, salt, and pepper. Form the mixture into
balls. Oil the bottom of a baking sheet and arrange the pork balls on
it. Bake at 350 degrees for 15 minutes or to desired doneness.

Zero Carb Pork Medallions

1 pound pork tenderloin


Salt and pepper to taste
1 tablespoon olive oil

Rub the salt and pepper into the tenderloin. In a skillet, heat the olive
oil and brown all sides of the tenderloin. Transfer to a roasting pan
and cook at 450 degrees for 20 minutes or until desired doneness.
Cut into medallions and serve.

Zero Carb Roast Beef Roll-Ups

½ pound roast beef, sliced


¼ pound carb-free cheese, your choice

Lay out a slice of beef, and place a piece of cheese on top. Roll
these up tightly, then secure with a toothpick. If desired, place on a
baking sheet and cook at 350 degrees for 10 minutes.

Zero Carb Seared Tuna Kabobs

Properly cooked tuna tends to look undercooked when compared to


most meats. If you don’t like that, you can cook it through. If you do
like it undercooked, make sure the tuna you’re buying is sushi-grade.

¼ pound tuna filets, cut into bite-sized pieces


Salt and pepper to taste
1 tablespoon butter, melted

Season the tuna chunks. Spear them on a metal skewer. Brush with
the butter, then place on a grill on high heat. Sear the outside, then
transfer to a plate and serve.

Zero Carb Salmon Balls

2 cans salmon, drained and flaked


½ cup mayonnaise
Salt and pepper to taste

Combine the salmon and the mayonnaise in a mixing bowl. Add the
salt and pepper. Form into balls, refrigerate, and serve when firm.

Zero Carb Smoked Fish Dip

2 tablespoons mayonnaise
2 drops liquid smoke
1 teaspoon horseradish

Zero Carb Smoked Turkey Drumstick

2 turkey legs
4 tablespoon butter
Salt and pepper to taste
2 teaspoons liquid smoke

Cover the legs with the butter. Season with the seasonings, then
brush with the liquid smoke. Bake at 350 degrees for one hour, or
until desired doneness. If there are any drippings, use as gravy for
the legs.

6 jumbo shrimp, peeled and deveined


Walden Farms zero carb cocktail sauce

Chill a martini glass or margarita glass. Fill the center with the
cocktail sauce. Arrange the shrimp on the rim of the glass and serve.

Zero Carb Tuna Balls

2 cans tuna, drained and flaked


½ cup mayonnaise
Salt and pepper to taste

Combine the tuna and the mayonnaise in a mixing bowl. Add the salt
and pepper. Form into balls, refrigerate, and serve when firm.

Zero Carb Turkey Jerky
