LUCUMA

DEFINITION:

Of Andean origin, lucuma is a fruit that not only delights us with its exquisite flavor,

but also offers wonderful nutritional properties; reason for which it is within the group

of Peruvian super foods.

According to chroniclers and historians, the use of lucuma comes from the pre-Inca

period. Pieces (ceramics, fabrics) with representations of this fruit have been found in

cultures such as Nasca and Moche; fact that shows its use by our former residents.

Currently, the highest concentration of lucuma is found in the regions of Ayacucho,

Cajamarca, Ancash, Moquegua and Lima. Its natural habitat is the low mountains,

although it develops well practically from sea level to 3,000 meters of altitude, with

temperatures of 8 to 27 degrees Celsius and humidity of 80% to 90%.

Different studies carried out locate its domestication in the inter-Andean valleys

from Peru, where the consumption of its fruit and the use of its wood have been closely

linked since ancient times. The oldest of these date from the 8th millennium BC, in the

region called Callejón de Huaylas in Ancash.

The origin of the cultivation took place at the time of the Mochica culture, by various

irrigation techniques and intensive cultivation to produce quantities of the product. In

pre-Hispanic times, lucuma was one of the main ingredients of the diet of the aborigines

of the valley in the highest areas.

Its pulp is soft, yellow-orange in color and its skin is tanned yellow

The tree that reaches 15 to 20 m in height, with a crown diameter of 6 to 10 m. The

crown has abundant branches, whose tender shoots have light brown to dark brown

pubescence. Alternate, lanceolate or oblong, elliptical or obovate leaves, with wavy

edges in some cultivars, up to 25 cm long and 10 cm wide, obtuse or subacute apex.

Young leaves light green or pink and very pubescent; Glossy and glabrous dark green

adult leaf. Hermaphrodite flowers, small, green to light brown, not very showy, grow in

the armpit of the leaf in small groups. The fruit is a spherical, conical or compressed

berry in the form of a base, with an exocarp or thin peel of green or tan yellow color,

generally in the apical part, surrounded by a silver coloration. The mesocarp has a very

pleasant flavor and aroma, an intense yellow color and a floury texture. The endocarp

that surrounds the seed is thin and light yellow. The size of the fruit varies from 2 to 10

cm. diameter.

Lucuma, being a fruit rich in potassium, minerals, vitamins and carbohydrates, brings

many benefits to our health. Let us know in detail the properties of this ancient Peruvian

fruit.

defenses, protecting our body from future diseases.

Prevents heart disease; The beta-carotene that this fruit contains also helps regulate

blood pressure, which helps prevent heart attacks

Fight diabetes; The nutritionist maintains that the consumption of lucuma contributes

to regulating the concentration of glucose in the blood.

Lucuma, internationally recognized

. In July 2018, the prestigious international news agency Bloomberg published an

article highlighting the properties of this Peruvian superfood that is gaining ground in

the international market. "Lucuma is high in beta carotene, iron, zinc, calcium, protein

and fiber. It also contains antioxidants and potassium, which are said to be good for the

heart, immune system, and skin,”the publication quotes.

GUIDELINES FOR RESPONSIBLE CONSUMPTION

lucuma is used in homes for the consumption of juices, cookies, cakes, desserts, yogurt,

drinks, ice cream, cocktails.

It is also used responsibly using it as flour, it is exported to other countries, so use it

throughout the year to take advantage of its properties.

Lucuma is an excellent natural sweetener capable of replacing sugar in our kitchen, and

whoever decides to introduce it into their diet can do so for several reasons:

-Reduce calorie intake and lose weight.

-Take care of our teeth.

-Prevent and control diabetes.

-Control reactive hypoglycemia.

-Eliminate processed foods from the diet.

reproduction processes, since it favors the embryo to develop normally.
