THE HISTORY OF THE HAMBURGER
The hamburger is the most eaten food in the world. The first
hamburgers were made and sold in Connecticut in 1895 by an
American chef called Louis Lassen.
Louis called them hamburgers because he was given the recipe
by sailors from Hamburg in Germany.
Hamburgers became a favourite in America in the early part of the
twentieth century. Their popularity grew even more after the Second World War, when they
were bought in large quantities by teenagers who preferred fast food to family meals.
In 1948, two brothers, Dick and Mac McDonald opened a drive-in hamburger restaurant in
San Bernardino, California. Since then, over 25,000 McDonald’s restaurants have opened
worldwide, and now 35,000,000 McDonald’s hamburgers are eaten every day in 115 countries
from India to the Arctic Circle.

CALENTICA
« Calentica » or « El-Hami » is one of the most famous specialities in Algeria, in particular
in the west part of the country. It is a hot salty dish. It is the favourite of students, workers and
even managers. The sellers of « Calentica » are numerous. We find them everywhere inside
their little shops or as hawkers.
The word « Calentica » comes from the Spanish word « caliente » which means hot.
A popular tale says that during the eighteenth century when the Spaniards in Oran were
besieged by the Turks, they did not find anything to eat. They accidentally cooked the flour of
chickpeas with the rain water and ate it hot.
Nowadays, « Calentica » is made of the chickpeas flour, water, eggs, oil and salt. People
prefer eating it hot with some cumin and some « h’rissa »..

MEALS IN GREAT BRITAIN
A typical full English breakfast is a very big meal – sausages, bacon, eggs, tomatoes,
mushrooms and of course toast. But nowadays many people do not have time to eat all this
and just have toast, or sometimes fruit and yoghurt. The typical breakfast drink is tea with cold
milk. Some people have coffee made with just hot water. Many visitors to Great Britain think

For many people, lunch is a quick meal. In cities, there are a lot of sandwich bars, where

Chips are eaten everywhere in fast food restaurants. But, no history of chips could be complete
without a look at the potato’s travel to Europe. The potato was first eaten by the Incas 6000
years ago in South America, and then it was brought to Europe in the 1500's, but the Europeans
did not like it at first. It became popular as a food thanks to Antoine-Augustine Parmentier. This
Frenchman is remembered to this day in his famous French dish « Hachis Parmentier ». But,
how were chips invented ?
Lots of Belgian people say that the potato was first fried in the late 1700's in the region of
Wallonia, where the people traditionally ate small fried fish. But when the rivers froze in winter,
potatoes were sliced into small fish shapes to imitate the traditional food, and then fried in fat.
During the French Revolution, many French people say that the fried potato was invented by
French cooks under the bridges of Paris. The proof, one type of fries eaten in France is « Frites
Pont-Neuf », named after a famous Parisian bridge.

THE HISTORY OF PIZZA


Pizza is a modern favourite all over the world now. But, how did this food get its start?
The idea of using pieces of flat round bread came from the Greeks. They called them « plakuntos »
and ate them with various toppings such as oil, garlic, onions and herbs.
The Romans enjoyed eating something similar and called it « picea ». Then, « picea » became
« pizza » in Naples in Italy, and people ate it with more toppings like cheese, ham and tomatoes.
Naples became the capital of pizza and the first pizzeria in the world opened there in 1830.
In 1889, King Umberto I and Queen Margherita invited pizza creator, Raffaele Esposito and told him
to make a pizza for them. He cooked a pizza like the Italian flag with red tomatoes, white cheese,
and green basil leaves. The new pizza was named « Pizza Margherita » in honour of the Queen.
Pizza migrated to America with the Italians at the end of the nineteenth century. The first pizzeria
in the USA opened in 1953 in New York City, by Gennaro Lombardi. But its popularity really
exploded when American soldiers returned from Italy after the Second World War. Americans
are now the greatest producers and consumers of pizza in the world.

Noma, which is run by Chef René Redzepi, is one of the 50 top restaurants in the world. It is
located at Strangade 93, DK1401, Copenhagen, Denmark. It opens from Tuesday to Saturday.
The name of the restaurant is a combination of the two Danish words « nordisk », which
means (Nordic) and « mad », which means (food).
The restaurant was established in 2004, and has been ranked as the best restaurant in the

The cuisine of Noma is Scandinavian. Famous dishes include « The Hen and the Egg ».

To the Editor

Dear Editor,

I would like to draw the kind attention of the concerned authorities towards the increasing
problem of pollution. Life in this city needs to be improved. For one thing, there are too
many cars, and there is too much traffic. It is getting worse! There is too much smog,
and the air pollution is terrible. A few years ago, it took me ten minutes to get downtown.
Now it takes me more than thirty minutes during the rush hour.
So what should we do about it? I think there should be more policemen at busy
intersections. They can stop traffic jams. The city does not spend enough on public
transportation. There should be more subway lines, and the train system needs a lot of
improvement.
I hope that the concerned authorities take immediate and urgent action against the
problem of traffic in this city.

What will our future look like by the year 2100? It is sure that life on the Earth will change
a lot. But, will things ever change for the better?
Our population may reach over 22 billion people. So, our cities may grow enormously,
and our small towns and villages may not exist anymore. A lot of animals and plants may
disappear along with the rain forests, too. Besides, we may live in floating cities built on seas
and rivers.
Our supplies of oil will run out, but scientists may possibly develop new forms of energy
like the sun and the wind, which do not pollute the air, so the Earth’s temperature will not
increase much more than it is today. At least, let’s hope so!
Our grand-children will not eat as much natural food as we do today. They may have
meals cooked by robots. They may speak the same language all over the world, and they will
probably spend less time at work because machines may do the job for them. They will surely

not. Enjoyment may not mean anything then.

Education in Great Britain
In Great Britain, education is compulsory and free for all children
until the age of sixteen. At this age, about two thirds of pupils leave
school and get jobs, and the remaining third stays at school till the

British children start school at the age of five. They spend six

years in a junior school. The infant school and the junior school can

Dghin Boudghan Benali, who is known as « Lotfi », is one of the
greatest names in the history of the Algerian Revolution.
He was born on May 7th, 1934 in Tlemcen. He grew up in a well-off
family with his parents, his only brother and sisters.
He learnt in a French school. Then, he attended the Medersa of
Tlemcen. But he left his studies and joined the National Liberation
Army on October 27th, 1955. He wanted to be a « Mujahed ».
Lotfi was fond of reading. He used to read a lot. He always had
some books with him and often asked his soldiers to read.
He became Colonel Lotfi in 1958, and settled in Morocco where he
managed to run the Revolution well. He had to enter Algeria. On
his way back on March 1960, he and four militants were attacked
by the French at the frontier of Bechar. They led a big battle until
death. They were very brave !

MOTHER TERESA
Mother Teresa never starred a Hollywood film, and she never took part
in sports competitions, but I think she deserves to belong to the world of
great people. There are four reasons for that.
First, she was a woman of peace and love. She never used violence
against those people who opposed her. She always used to smile and
sow love everywhere she went saying « Peace begins with a smile »
and « If you judge people, you have no time to love them. »
Second, she was a courageous heroine. She knew there were people
who wanted to prevent her from doing what she believed in, but she
did not care and continued her way with big devotion saying « If you are kind, people may
accuse you of ulterior motives. Be kind anyway. »
Third, she was a militant who devoted her entire life to the service of the poor, the helpless,
the sick and the orphans. She founded, for that, the Missionaries of Charity in India first, and
then in other countries. Governments, charity organizations and prominent individuals have
been inspired by her work.
Finally, she was a very modest person though she was very famous all over the world. Her
obtaining of the Nobel Prize for Peace in 1979 and other awards did not make of her an
arrogant woman.
Mother Teresa spent her whole life teaching the world lessons of love, peace, forgiveness,
tolerance and respect. So, Catholics all over the world should be proud of her and should
celebrate her at least once a year.

School in roman times


In ancient Rome only boys used to attend school. Girls used to stay at home and their
mothers taught them. They learnt to read, write and run a house.
Boys used to go to school with their personal slaves. They learnt arithmetic, reading and
writing, and their fathers had to pay the teacher. This is why many Roman children did not
use to go to school because their parents were not rich.

THE TASSILI
An Appointment With The Prehistory
The Algerian Sahara is not sun and sand only, but it is a world full of immense shadows
and wonderful oases. It is also the memory of talented artists who left a true treasure in the
Tassili caves where they used to live. Numerous frescoes are found there. They represent
wild beasts, farm animals and a lot of men. They were done by our ancestors in colossal and
tiny shapes. They narrate the human life which goes back to 6000 B.C. in scenes of housing,
hunting, sowing and fighting.
Anthropologists have classified them in four periods to show the evolution of mankind. The
last one was the Period of the Camel when early people started to use the writing symbols.
These nice paintings in the south-east of Algeria are now within the list of the World Heritage
Committee which helps to protect, maintain and restore the historical sites all over the world.

J. K. Rowling, who is the author of the amazing series « Harry Potter », was born on July
31st, 1965 in a small town in southern England. She wanted to be a writer from an early age.
When she was 6, she wrote her first story about a rabbit which gets sick. At school, she used
to invent stories to tell her friends.
In 1990, she got the idea for the boy wizard Harry Potter. She was on a train trip to London.
She worked on the story while she was in Portugal from 1992 to 1993.
She returned to England in 1994, with three chapters of Harry Potter in her suitcase.
After returning home, she had no money and used to live in a small uncomfortable flat. But,
she continued writing. In 1995, she finished the first book in the series, Harry Potter and the
Philosopher’s Stone. It was published two years later and was a big success.

world. Now, she lives in Scotland with her husband Neil and three children: Jessica, David

Prophet Muhammad (Peace and Blessings be Upon Him) was born in 570 in Mecca.
His father Abdullah died before his birth and his mother Amna died while he was a child.
Therefore, his grand-father Abdul-Muttaleb took care of him, and later his uncle Abu-
Taleb did.
At the age of 25, he got married for the first time to Khadidja (May Allah be Pleased with
Her) who loved him for his honesty.
At the age of 40, he received the Koran through the archangel Gabriel in Cave Hira where
Muhammad used to go. Some Arabs in Mecca believed him and converted to Islam and
many of them refused that. They laughed at him and some even stoned him. But, the
Prophet (Peace and Blessings be Upon Him) did not give up, and continued to preach
patiently. In 622, he migrated to Medina. There, people welcomed him and listened to
him with great interest. In 630, he returned to Mecca triumphantly. There, he managed to
destroy the idols round the Kaaba, and since then, the Islam has spread quickly all over
the world. The Prophet (Peace and Blessings be Upon Him) got a terrible fever in 632
and died of it.

Bill and I left Miami one summer weekend on our annual sailing holiday
in our boat, Siboney. We wanted to sail round the Caribbean Sea for

Once upon a time, there was a pretty princess who had


a golden ball. One day, she dropped it into the water of
a deep dark lake in the garden of the palace, where she
lived. She got very sad.
As she was crying there, she heard a voice, “Don’t cry,

A thirsty Ant went to the bank of a river. As she was drinking water, she fell into the river. She
was about to die, but a nice Pigeon who was on the tree saw her and rushed to help her. She
took a little branch and offered it to the Ant. The Ant climbed onto it and floated in safety to
the bank.
Soon after, a hunter stood under the tree. He wanted to shoot the Little Pigeon on the branch

LITTLE RED RIDING HOOD


Once upon a time, there was a little girl who lived in a village near the forest. She used to
wear a red cloak, so the villagers called her Little Red Riding Hood.
One morning, she decided to visit her granny. Her mother gave her a basket with some honey
and a cake and told her: « Go straight to granny’s house, and don’t talk to strangers! The
woods are dangerous. » « Don’t worry, mum! I’ll be careful », said Little Red Riding Hood.
But on her way, she forgot her promise. She was enjoying the warm spring day, and as she
was collecting flowers, a big Wolf came in. « Hello! » he said, « Where are you going? » « I’m
going to see granny. She lives in a house behind those trees » answered the little girl. The
Wolf ran to granny’s house. He ate her up and got into her bed. A little later, Little Red Riding
Hood reached the house. She thought the Wolf her granny, and when she wanted to kiss her,
the Wolf jumped on her and tried to eat her. Little Red Riding Hood started to scream.
A woodcutter heard the little girl and rushed to rescue her. He hit the Wolf over the head. The
