Peruvian ceviche

Good morning my name is Aldair Miguel Arana Salinas today we are going to
make the Peruvian ceviche and how to prepare it in a few steps and I like to cook
with my grandmother

Ingredients:
1 kg of white fish
6 limes and 4 lemons
2 red onions
Fresh coriander
1 tsp. of ají amarillo or fresh ají limo
1 tsp. of salt
White pepper
Cooked corn or corn
1 sweet potato

Fish ceviche recipe:


We previously prepare the garnish of the ceviche, washing the sweet potato well and cooking 20
minutes over medium heat, since the water begins to boil. We prick it to check that it is soft
inside. We remove from the water and reserve. In a separate saucepan, cook the corn on the cob
for 10 minutes. We booked.

We cut the red onion in julienne, and we go through cold water to remove the bitterness.

We also chop the chili pepper from which we will have previously removed the seeds and veins,
cutting it lengthwise (if you cannot find it, you can use red chilies). If you use rocoto or yellow
pepper paste, add a dessert spoon to the ingredients. Finally, we chop the coriander.

We clean the fish well and cut it into medium dice of approximately 1-2 cm and season.
We put all the ingredients in a bowl that we will have previously rubbed with the chili pepper,
stir and leave about 3 minutes for the fish to soak up the flavors. Drizzle with the lime and
lemon juice, which should cover most of the fish. Here we make a first point, try not to squeeze
the lemons or limes with a juicer, but only squeeze them halfway with your hand, so that the
bitterness of the skin does not spoil the taste of the ceviche.

We stir the ingredients well with a spoon so that the fish soaks up the flavor. We rectify salt if
necessary. We let it rest for approximately 5-7 minutes, at which point the fish will change
color, turning whitish due to the action of the lemon acid.

For the plating of the ceviche, we peel the sweet potato and cut some thick slices.
We shelled the corn on the cob. We place a little of the marinated fish, onion on top, and
accompany the sweet potato and the corn or corn kernels, we can also put fields or toasted corn.
