Lemon Poppy Seed Cake

Ingredients:
¼ cup Olive oil
200ml Almond milk
4 tbs Lemon juice
2 tbs Lemon zest
8 tbs Maple syrup
1 tsp Vanilla
Pinch of Salt
3 tbs Poppy seeds
150g Almond meal
150g Gluten free flour
2 tsp Baking powder
¼ tsp Bi-carb soda

Directions:
Preheat oven to 180 degrees. Combine all ingredients. Pour into loaf tins. Bake in
oven for 15-20 minutes until risen and golden and brown.

Lemon Poppy Seed Cake Syrup


This is the syrup that goes over the cake

Ingredients:
2 tbs Lemon juice
4 tbs Maple Syrup

Directions:
Mix together the lemon juice and maple syrup. Drizzle it over the cake as soon as its
out of the oven, it will soak into the cake better while its hot.
