Compote for daily use is made from fresh fruits and berries, dried fruits and berries.

The procedure for


preparing raw materials for compote consists of cleaning, extracting, washing and chopping fruits and
berries from inedible parts.

Some fruits and berries melt when boiled and mix with water, so heating is stopped as soon as they are
put into water and syrup. It is recommended to add sugar after the compote has cooled to increase the
solubility of the soluble substances in the fruit. To improve the aroma and taste of the compote, 5-10 g
of grape wine is added to each pile. When making compote from dried fruits and berries, they are
selected and cleaned, washed 3-4 times in hot water and then cooked. If company are going to make
compote from several dried fruits, they select the fruits, cook them separately and then mix them. Cook
apples and pears for 35-40 minutes, other fruits for 15-20 minutes, raisins for 3-5 minutes. Then they
are mixed, sugar is added and cooled. The fruit of the compote should be whole, the juice should be
clear, brown in color, sweet and fragrant.

Compote, as they are used in Azerbaijan, are often consumed as a daily drinking. This provides an
opportunity for our company, Bizim Tarla, to export our products abroad. No particular target market is
required for compote. They are a part of the food industry and can be consumed by the general market.
This product can be exported to any country considering the long vitality and convenience of storing.

At the present time, Fruit Production in Azerbaijan is increasing progressively. According to State
Statistics Committee of Republic of Azerbaijan, the fruit and berries production has increased by 4-5% in
the last year compare to other years. Azerbaijan was able to produce approximately 122.5 million tons
of fruit and berries, which is a good indicator of development in agriculture sphere. This development in
agriculture sector gave an opportunity for the development of the fruit compote business. Having a
variety of tasty products and getting a large market share in domestic country stimulated the idea of
developing internationally. Due to available climate, land, water resources the productivity in the
production of fruits is increasing every year. Bizim Tarla’s major factories are located in three regions of
Azerbaijan where the high quality fruits can be collected by having low-cost labour and saving money.
