CHAPTER I

BACKGROUND OF THE STUDY

Introduction

Longganisa is one of the most popular breakfast meals among Filipino specifically in San

Jose, Occidental Mindoro. According to Tourism San Jose (2020), the well-known San Jose

Longganisa is not a good fraction of meal but also a perfect combination of one’s pasalubong.

This San Jose style sausage is appetizing because of its herbs and spices. It has a complimenting

taste of sweetness, saltiness, and a little bit spiciness that is perfect for anyone who is looking for

a good and nice bite. It is famous for its unique taste that melts in your mouth and its aromatic

scent that makes you crave for another cup of rice. The secret of this sausage is all-out

seasonings such as salt, garlic, soy sauce, sugar match with partially flavored sweetness with the

assurance of a real fresh meaty chunk. It is best served during breakfast with fried rice

(Sinangag) and other fried courses such as egg, tuyo (dried fish), pork, and tapa usually called as

SILOG.

San Jose Version of Skinless Chicken Longganisa it is a developmental research which

focuses in the innovation of well-known longganisa of San Jose. This research will provide the

necessary information and procedures on how to make skinless chicken longganisa. Chicken is

the main ingredient of this recipe which is, rich in protein, great source of lean, low fat protein

which contributes to muscle growth and development and it is also good for the heart. And this

product will benefit the non-pork individuals.

The researcher aims to develop longganisa using local ingredients and to showcase this

product to all people living in San Jose, Occidental Mindoro.


Statement of the Problem

In this study, the researcher wants to determine the following:

1. What are the necessary local ingredients used in making San Jose version of skinless

chicken longganisa?

2. What are the processes and procedures on making skinless chicken longganisa?

3. What is the raw food cost and financial requirement on making skinless chicken

longganisa?

Objectives of the Problem

The main objective of the study is to determine the following:

1. Determine the necessary local ingredients used in making San Jose version of skinless

chicken longganisa.

2. Enumerate the processes and procedures on making skinless chicken longganisa.

3. To determine the raw food cost and financial requirement on making skinless chicken

longganisa.

Conceptual Framework

The figure below shows the conceptual framework of the study. The first box indicate the

independent variable of the study which is local ingredients used, the processes and procedures

and the raw food cost and financial requirement in making skinless chicken longganisa. While
the second box shows the dependent variable of the study which is result of independent variable

the San Jose version of skinless chicken longganisa. The single headed arrow was used to

represent the relationship between the independent and dependent variables.

Significance of the Study

This study will conduct to develop and innovates the well-known longganisa of San Jose,

Occidental Mindoro into upgraded version and available to all individuals. The findings of this

study shall provide the benefits to the following:

Researchers.  The results will provide the researchers with some knowledge on how to

make the San Jose version of skinless Chicken Longganisa. It will give the researchers a

realization that the simple product like longganisa will have a upgraded version that is found

only in san Jose Occidental Mindoro


Hospitality Management Students. The findings of this study will help the students to

undergo developmental research to enhance their skills and innovate the product locally and

internationally.

Future Researchers. This study will help them to sustain information in developing new

local products and to showcase the capabilities of people of San Jose in making new product.

And this study will benefit them as data in the near future. This study may serve as a guide by

having a baseline data for the next researchers in terms of creating this kind of research.

Scope and Limitations

This study will focus on determining the local ingredients that is found only in the

Municipality of San Jose, Occidental Mindoro. The San Jose version of skinless Chicken

longganisa will cost 500 pesos only which consists of ten (10) to fifteen (15) servings.

This study will be limited only from determining the local ingredients used, procedures

and the raw food cost of the product.

Operational Definition of Terms

The following terminologies were operationally defined for the better understanding of

the study:
San Jose Version of Skinless Chicken Longganisa – refers to the main subject of this

developmental research and this product will only found in the Municipality of San Jose,

Province of Occidental Mindoro.

Skinless Chicken Longganisa – it is made up of chicken seasoned with local spices and

ingredients found in San Jose, Occidental Mindoro.

Local Ingredients – refers to ingredients found in San Jose, Occidental Mindoro it could be

spices or herds used in the finished product.
