5-INGREDIENT BROCCOLI CHEESE SOUP

(CROCK POT VERSION)

This easy, low carb broccoli cheese soup is gluten-free, healthy, SUPER CHEESY and needs just 5
ingredients. Enjoy this version of the original recipe, and this time let the Crock Pot do all the work!

INGREDIENTS
4 cups Broccoli (cut into florets)
4 cloves Garlic (minced)
3 1/2 cups Chicken broth (or vegetable broth)
1 cup Heavy cream
3 cups Cheddar cheese (pre-shredded)

CROCK POT INSTRUCTIONS


1. Place all ingredients, except cheese, into the Crock
Pot. Cook 3 hours on high or 6 hours on low.
2. Use a slotted spoon to remove the broccoli into a
separate bowl.
3. With the Crock Pot still on High, add the shredded
cheese gradually (1/2 cup at a time), whisking until
melted.
4. Add the broccoli back to the Crock Pot.

• The original recipe called for sautéing the garlic first. You can do this for a minute in a pan before
placing it in the Crock Pot, but it’s still good if you skip that step.
• Unlike the stove-top recipe, you cannot add the cheese without removing the broccoli first. The heat
of a slow cooker is too low, so the cheese will not melt well and likely clump to the broccoli florets.
Remove the florets with a slotted spoon first, melt in the cheese, then add the broccoli back in.
• Just like the stove-top version, you can make a pureed soup by using an immersion blender if
desired.
