 Chicken Shashlik with Gravy

Ingredients
Chicken boneless ½ kg cut in cubes
Capsicum 2 cut in square pieces
Tomatoes 2 cut in square pieces
Spring onion bulbs 8
Oil ¼ cup
Chili powder 1 tsp
Garlic paste 1 tsp
Mustard powder 1 tsp
Salt 1 tsp
Wooster sauce 1 tbsp
Soya sauce 1 tbsp
Chili sauce 1 tbsp
Ketchup 4 tbsp
Boiled rice to serve
Ingredients for Chicken Gravy
Chicken breast 3 cut into tiny cubes
Capsicum 1 cut in tiny cubes
Wooster sauce 1 tsp
Soya sauce 1 tsp
Tomato paste 1 tbsp
Chili sauce 1 tbsp
Garlic paste ½ tsp
Mustard powder ½ tsp
Salt ½ tsp
All spice ¼ tsp
Oil 2 tbsp
Ketchup 4 tbsp
Ingredients for BBQ Sauce
Apple grated half
Banana half
White vinegar ½ cup
Ketchup ¼ cup
Salt ½ tsp
Chili sauce 2 tbsp
Sugar 2 tbsp
Method
Marinate ½ kg chicken cubes with 1 tsp salt, 1 tsp chili powder, 1 tsp garlic paste, 1
tsp mustard powder, 1 tbsp Wooster sauce and 1 tbsp soya sauce for 30 minutes,
heat 2 tbsp oil, add marinated chicken cubes, cook for 5 minutes, add 1 tbsp chili
sauce and 4 tbsp ketchup, cook for another 5 minutes and remove, cool chicken, put
on wooden skewers, starting and ending with spring onion bulbs, grill shashlik stick
in frying pan for 5 minutes adding Bar B Q sauce while grilling. Remove and keep
aside.
Method for Chicken Gravy
Heat 2 tbsp oil, add ½ tsp garlic paste with 3 finely chopped chicken breast cut into
cubes, cook for 2 minutes, add in ½ tsp salt, 1 tsp Wooster sauce, 1 tsp soya sauce,
½ tsp mustard powder, 1 tbsp tomato paste, 1 tbsp chili sauce, 4 tbsp ketchup, ¼ tsp
all spice and ¼ cup water, cook till chicken tender and thick gravy is left. Lastly add
in finely chopped 1 capsicum.
To Serve
Spread boiled rice in a plate, pour chicken gravy on top with shashlik stick, and serve
with fries.
 Fudge Brownies with Chocolate Frosting
Ingredients
Butter 4 ounces
Chocolate 2 ounces
Eggs 2
Caster sugar 1 cup leveled
Self raising flour 1 cup
Walnut chopped ½ cup
Vanilla essence 1 tsp
Ingredients for Chocolate Butter Frosting
Butter 4 ounces
Icing sugar 2 cups
Vanilla essence ½ tsp
Milk 2 tbsp
Cocoa powder 3 tbsp heaped
Method
Grease 8 by 8 inch baking pan, in a medium sauce pan melt 4 ounce butter and 2
ounce chocolate on low flame, remove from heat, stir in 2 eggs, 1 cup caster sugar
and 1 tsp vanilla essence using a wooden spoon, beat lightly until just mixed, stir in 1
cup self raising flour and ½ cup chopped walnuts, spread in prepared pan, bake on
180 degree C for 30 minutes, cool and ice with chocolate butter icing, decorate top
with grated chocolate.

Method for Chocolate Frosting


Beat 4 ounce butter till fluffy, gradually adding in 2 cups of icing sugar and 3 tbsp
cocoa powder, beat well, slowly add in the ¼ cup milk and ½ tsp vanilla essence,
beating until well mixed, use frosting to ice the brownies.
 Habshi Halwa
Ingredients
Fresh milk (without boiling) 1 Liter
Samnak 2 tbsp
Flour 4 tbsp slightly heaped
Citric acid ¼ tsp heaped
Alum ground ¼ tsp
Sugar ½ cup
Ghee 2 tbsp
Brown color a pinch
Liquid glucose 1 tbsp
Nutmeg ground ¼ tsp
Mace ground ¼ tsp
Method
Put 3 cups of milk in pan, in reaming 1 cup milk add 2 tbsp samnak and 4 tbsp flour,
mix well with whisk so no lumps remain, add this mixture to the milk in the pan and
keep stirring well continuously with whisk, put this to cook on fire, stirring
continuously till it starts boiling on the corners of the pan, in a small bowl mix
together ¼ cup water, ¼ tsp citric acid and ¼ tsp alum, mix well, when milk slightly
boiling remove pan from flame and add the dissolved mixture of citric acid little by
little, wait till it curdles, do not stir if it does not curdled well and water does not
comes on surface, in this situation add 1 more pinch of each citric acid and alum
mixed in little water, now leave this mixture for 4 hours, add to it 1 tbsp ghee and 2
tbsp sugar, leave it for 4 hours, again put the pan to cook until ½ cup water left and
remaining water dries, then add 3 tbsp of more sugar with pinch of brown color and
left over 1 tbsp ghee, cook till mixture nearly dry, add ground nutmeg and mace. Also
add 1 tbsp liquid glucose, mix well till glucose dissolves, remove in a greased 7 by 7
inches square pan, sprinkle almonds and pistachio on top, leave to set and cut into
pieces.

 Rustam Karahi
Ingredients
Mutton (small pieces) ½ kg
Onion chopped 1
Tomatoes chopped 5
Whole green chilies 6
Oil ½ cup
All spice 1 tsp
Ginger garlic paste 1 tbsp
Chili powder 1 tbsp
Crushed red pepper 1 tbsp
White pepper ½ tsp
Turmeric ¼ tsp
Coriander leaves chopped 4 tbsp
Salt 1 ½ tsp
Method
Boil ½ kg mutton with 4 cups of water till ¾ done and 1 cup stock remains, heat ½ cup oil
in a wok, fry 1 chopped onion, add 1 tbsp ginger garlic paste, 1 ½ tsp salt, 1 tbsp chili
powder, 1 tbsp crushed red pepper, ¼ tsp turmeric, ½ tsp white pepper and 5 chopped
tomatoes, fry well. Add boiled mutton, cover and cook till mutton tender and oil comes on
top, lastly add 4 tbsp chopped coriander leaves, 6 whole green chilies, 1 tsp all spice powder
and simmer for 10 minutes.
 Mexican Chili Pizza
Ingredients for Pizza Dough
Flour 8 ounces
Instant yeast 1 ½ tsp heaped
Salt ½ tsp
Sugar 1 tsp
Powder milk 2 tbsp
Salt ½ tsp
Oil 2 tbsp
Egg 1
Ingredients for Filling
Roasted mince 1 cup
Chopped onion 3 tbsp
Sweet corn ½cups
Capsicum chopped 1
Tomato 1 chopped remove seeds
Crushed red pepper 1 tsp
Grated cheddar cheese ¾ cup
Grated mozzarella cheese ¾ cup
Oregano leaves 1 tsp
Olives sliced 2 tbsp
Mushroom sliced 2 tbsp
Pizza sauce 3 tbsp
Ingredients for Pizza Sauce
Tomato blended 4
Tomato paste ½ cup
Oregano leaves ½ tsp
Crushed red pepper 1 tsp
Salt ½ tsp
Orange red color pinch
Oil 2 tbsp
Crushed garlic 1 tsp
Method for Pizza
In a bowl mix together 8 ounce flour, 1 ½ tsp yeast, 1 tsp sugar, 2 tbsp oil, ½ tsp salt, 2
tbsp powder milk and 1 egg, knead into a soft dough with Luke warm water, and leave it in a
warm place to rise for ½ hour, put dough in a greased dough cover and leave it to rise for 1
hour, pre heat your oven to 200 degree C, spread pizza dough on 10 inch pizza plate, brush
with pizza sauce, sprinkle 2 tbsp cheddar cheese, top with 1 cup mince, 3 tbsp chopped
onion, 1 tomato, 1 capsicum, ¾ cup mozzarella cheese, 1 tsp crushed red pepper, 1 tsp
oregano, and lastly grated ¾ cup cheddar cheese. Cover and leave it to rise for 30 minutes
then bake for 25 minutes until golden.
Method for Pizza Sauce
Blend 4 tomatoes, heat 2 tbsp oil fry 1 tsp crushed garlic till light golden, add in ½ cup
tomato paste, cook till boiling add 1 tsp crushed red pepper, ½ tsp salt and pinch of color,
cook tills sauce thickens cool and use as required.

 Chicken bread
Ingredients for dough
Flour 16 ounces or 4 cups
Yeast heaped 1 tbsp
Powder milk 2 tbsp
Salt 1 tsp
Oil 4 tbsp
Egg 1 + 1
Castor sugar 1 tsp
Ingredients for chicken filling
Chicken boil and shredded 1 ½ cup
Onion chopped 1
Salt 1 tsp
Black pepper 1 tsp
Coriander leaves 2 tbsp
Green chilies chopped 4
All spice 1 tsp
Flour 2 tbsp
Butter 2 tbsp
Milk 1 cup
Sesame seeds as required
Method for dough
In a bowl mix together 4 cups flour, 1 tsp salt, 1 tsp castor sugar, 2 tbsp milk powder, 1 tbsp
yeast, 4 tbsp oil and 1 egg, knead to a medium soft dough with water, leave to rise for 1
hour.
Method for filling
Heat 2 tbsp butter fry 1 chopped onion till soft add2 tbsp flour with 1 tsp salt, 1 tsp black
pepper, 1 tsp all spice, 1 cup milk, cook till thick, mix in 1 ½ cup shredded chicken add 4
chopped green chilies and 2 tbsp coriander leaves, remove and cool filling now roll the
dough to a rectangular shape, snipped the edges sides with scissor on knife, put filling in the
centre and fold each side so they overlap each other the filling will show slightly, brush top
with 1 beaten egg, sprinkle sesame seeds and bake on 200 degree C for 25 minutes.
