INTRODUCTION
If you’re on the ketogenic diet - or considering it - you know that a lot of
foods are off-limits. This is because of their carb content. On the keto diet,
the goal is to get your body into ketosis, so it burns fat instead of carbs for
fuel. If you eat too many carbs, the ketosis process can’t start. That means
cutting out all grains, beans, and most sugar, and replacing those carbs with
fat from foods like cheese, yogurt, eggs, avocados, coconut oil, and more.

The keto diet has been popular for a while, which means there are lots of
innovators out there coming up with keto-friendly variations of just about
every treat imaginable. One of those treats - the chaffle - is a waffle without
the grain. In fact, it just uses two ingredients!

In this guide on everything you need to know about keto chaffles, we’ll talk
about where the chaffle came from, all the variations you can make with the
basic recipe, the best chaffle makers, and tips on making the tastiest chaffles.
If you find yourself missing comfort foods on the keto diet - especially bread
- the chaffle can satisfy your cravings.
ORIGIN OF THE KETO CHAFFLE
First of all, what is a chaffle? It’s literally cheese (usually mozzarella, but not
always) and an egg. The name comes from mashing the word “cheese” and
“waffle” together. It’s really more of an omelette than anything else, but the
shape implies a bread substitute. Who came up with this idea of cooking eggs
and cheese in a waffle maker?

According to the Know Foods blog, chaffles actually began as a vegan thing,
so they clearly did not involve cheese and eggs. These chaffles were a
marriage of a churro and waffle, so they were desserts with cinnamon sugar
and dairy-free ice cream. Seabirds Kitchen in California put chaffles on the
menu in 2015 and started hashtagging with “chaffle” the following year.

The keto chaffle, however, appears to be much more recent, at least in its
ultra-popular form. It can be hard to pin down who exactly created
something, especially in the era of social media. Oftentimes, a recipe floats
around for a while before it blows up, and there were technically multiple
people responsible. This is even more true when the recipe is as simple as
cooking an egg and some cheese in a waffle maker.

Referring back to Know Foods, the keto chaffle may have gotten its start on
the Instagram of keto trainer and meal planner Kiana Fonua Williams. She
posted a picture of her “easy Cheesy Waffle omelettes” in May 2019, but it
took a while before another keto blogger noticed it. He added #chaffle, and a
new food fad was born. Now, chaffles are everywhere on keto blogs and on
Facebook. There’s a chaffle group with 52k members. Considering the
chaffle’s young status, that’s quite a feat!
MAKING CHAFFLES
To make keto chaffles, all you technically need is cheese and egg. To
successfully make one mini waffle, it’s ½ cup cheese and one egg. However,
recipes rarely stay the same, so there are countless variations on this very
simple formula, and even more experiments with added ingredients like
almond flour, coconut flour, cream cheese, spices, and so on. The more extras
you add, the more the chaffle will taste like a real waffle, and not an egg-
cheese mixture. Here are some flavor profile examples:
Broccoli cheese - add fine chopped broccoli
Ham and cheese - add fine chopped ham
Everything bagel - add everything bagel seasoning
Garlic parmesan - add parmesan, garlic powder, and parsley
Taco - add taco seasoning
Lemon pepper - add lemon pepper seasoning
Blueberry - add blueberries
Cinnamon sugar - add cinnamon and stevia
Pumpkin spice - add nutmeg, cinnamon, clove, and ginger
Chocolate - add cocoa powder
Peanut butter bacon - add cooked bacon bits and PB2 powder
Key lime pie - add almond flour, cream cheese, lime juice, and lime zest

The fun doesn’t stop with the chaffle itself. Once you have it made, you can
add other ingredients and make a wide variety of savory and sweet dishes.
Basically, wherever you would use bread, you can use a chaffle. This
includes:
Chaffle BLT sandwich - bacon, lettuce, and tomato
Chaffle breakfast sandwich - egg, bacon, and more cheese
Hot dog - wrap hot dog with chaffle
Strawberry “shortcake” stack - strawberries and whipped cream (no refined
sugar added)
Chaffle pizza - tomato sauce, cheese, and meat/veggie toppings of choice
Chicken and chaffle - use a keto-friendly fried chicken recipe
Tacos - use the chaffle as a taco shell

How big should your chaffle be? It’s up to you. For the small chaffles that are
great for sandwiches, you will need a mini waffle maker. If you want a more
traditional waffle like a Belgian-style, a regular waffle maker works. You just
use more batter. In the next chapter, we’ll go over the best keto chaffle

BEST KETO CHAFFLE MAKERS
To make the best chaffles, you need a good maker. The classic chaffle, the
kind that’s the size of an Eggo waffle, requires a mini waffle maker. The
Dash is currently the most popular chaffle maker. It’s so popular, it’s
frequently sold out on Amazon. It weighs around 1 pound and makes one 4-
inch chaffle, so even if you have a tiny kitchen, it doesn’t take up much
space. Choose from a wide variety of colors and pay less than $15.

If you decide the mini Dash isn’t the right chaffle maker for you, there are
others. You want to think about buying considerations like how easy is it to
clean, how big is it, do you want removable plates, and so on. Prices can vary
pretty widely from the cheap Dash to $60+ Cuisinart models. Here are some
more affordable choices:
T-Fal EZ Clean
For square Belgian-style waffles, this T-fal is a solid option. It makes two at a
time and the waffles get deep pockets perfect for toppings. The plates are
interchangable, non-stick, and dishwasher-safe, so cleaning is very
convenient.
Hamilton Beach Nonstick Belgian
Hamilton Beach is known for affordable kitchenware. Their Belgian waffle
maker is made of stainless steel, so cleaning is easy, and it has power and
preheat lights on top, so you know when the iron is hot enough for your
chaffle batter. You can also select the shade of your chafle from light or
brown and crispy. When not in use, you can store it upright, like a little
suitcase.
Dash No-Drop Belgian waffle maker
Also from the Dash brand, the Belgian waffle maker is ideal for overflowing
batter, which is a common issue with chaffles. This maker has side “pockets”
that catch and cook overflow, so cleaning is easy. It can make 4 full-size
chaffles, so it’s a good choice if you don’t want to cook a bunch of individual
servings.
TIPS ON MAKING THE BEST CHAFFLES
Chaffles aren’t difficult to make, but there are tips you can follow to ensure
they turn out perfectly every time. In this chapter, we’ll go through thirteen of
them at every stage, from prepping the waffle maker, cooking the batter, to
proper storage.

Spray the iron


Remembering to spray the griddle of your waffle iron is important, or the
chaffle will stick and make a mess. A keto-friendly fat like butter or coconut
oil is the best choice as opposed to something in a can.

Preheat the waffle iron


Before you pour your chaffle batter into the iron, that iron should be very hot.
Most makers have a preheat button, which lets you know when the iron is
ready.

For crispy chaffles, layer the ingredients


A lot of chaffle recipes have you mix the cheese and egg all together and
pour in the iron like a regular waffle, but for really crispy chaffles, there’s a
different route. Put some cheese in the iron first, and then pour over the egg,
and then top with more cheese. This keeps the cheese on the outside of the
waffle, so it crisps up.

For less-eggy chaffles, use just egg whites


A common complaint about chaffles is that they don’t taste waffle-y enough.
To cut down on the eggy flavor, separate the egg whites and yolks, and just
use the egg whites.

For less-cheesy chaffles, stick with mozzarella


You can use either mozzarella or cheddar for chaffles, since they both melt
easily, but cheddar has a stronger flavor. If you want to make a sweet chaffle
or just a less cheesy-tasting one, use the milder mozzarella.

Use the right amount of batter


It can be tricky to figure out how much batter to pour into your chaffle
maker. For minis like the Dash, around ¼ cup is a good amount. For regular-
sized irons, ½ cup of batter should work.

Don’t open the chaffle maker during cooking


It’s tempting to check on the chaffle to see how it’s doing, but opening it up
only drags out the cooking time. You want to leave the iron closed the whole
time.

Wait for the steam to stop


When can you open the chaffle maker? After a few minutes cooking, it will
start to steam, and once that steam stops, it’s a good sign that the chaffle is
done. Many chaffle makers, like the Dash, will also have a little light that
turns on once it’s ready.

Let the chaffle cool before enjoying


A hot chaffle is delicious, but you want to wait a few minutes for your chaffle
to get slightly cool once it’s out of the iron. This allows the chaffle to get a
bit crispier.

Freeze extra chaffles


You can actually freeze the chaffles you don’t eat! This is great news for
people who don’t want to make a fresh chaffle every day, but who do want to
eat one. To freeze, put the chaffles in a freezer bag with parchment paper
between each one, so they don’t stick together.

Reheat chaffles in toaster or oven


If your chaffles are small, they will probably fit in your toaster. You can
reheat them that way, though if they consist of just egg and cheese, they’ll be
pretty floppy and might break off into the toaster. For those, it’s probably
best to reheat them in a 350-degree oven.

Use a toothbrush to clean your chaffle maker


If cleaning your chaffle maker is a pain, using a toothbrush can really help.
The bristles can get between the “teeth” really well from every angle.

Use a wet paper towel


Another good way to clean a chaffle maker is with a wet paper towel. Just
make sure the iron is cool, but don’t leave it sitting around dirty for too long.

Chaffles are very simple to make, but there are endless ways to change up the
