Kitchen Equipment
Kitchen equipment is appliances we use to cook. Headings
under which kitchen equipment can be divided into are:
 Measuring and timing
 Mixing and turning
 Cutting
 Cookware
 Bake ware
 Labour saving devices
Measuring & Timing
The process of calculating and determining the specific amount
of an ingredient required by using a standard measuring device,
such as a measuring spoon, scale, thermometer or timer.
Equipment Description & Uses
Measuring Spoon A measuring spoon is a type of spoon
used to measure an amount of an ingredient,
either liquid or dry, when cooking. Measuring
spoons may be made of plastic, metal, wood etc.
They are available in different sizes, including
teaspoon and tablespoon.
Scale A kitchen scale is used to measure the weight of
ingredients and other food. Kitchen scales are of
balance and spring models. A balance scale will
give a more accurate reading than a spring scale.
Using a scale will result in a more accurate
measurement of the ingredients rather than
measuring it by volume.
Thermometer A meat thermometer or cooking thermometer is
a thermometer used to measure the internal
temperature of meat, especially roasts and
steaks, and other cooked foods.
Timer A timer is a device that can be set for a number
of minutes (usually up to one hour) that sounds
an alarm such as a bell or buzzer when the
specified amount of time has elapsed. We
commonly use it when cooking or baking.
Mixing & Turning
Mixing equipment such as a pastry blender and a mixer can be
used to blend ingredients together. Turning equipment such as
a flipper and a spatula can be used to lift and turn food during
the procedure.
Equipment Description & Uses
Pastry Blender A pastry blender is used to mix a hard (solid) fat
into flour in order to make pastries. It is usually
made of narrow metal strips or wires attached to a
handle, and are used by pressing down on the
items to be mixed.
Mixer A mixer is a kitchen utensil which uses a gear-
driven mechanism to rotate a set of beaters in a
bowl containing the food to be prepared. It
automatically repeats the tasks of stirring,
whisking or beating.
Flipper Flippers are a metal tool used for flipping food
over in a frying pan, on a griddle or on a girdle.
Occasionally they are also used for serving with.
They consist of a long handle with a completely
flat shovel at the end.
Spatula A spatula is a hand-held tool that is used for lifting,
flipping, or spreading. Spatulas have a handle that
is long enough to keep the holder's hand away
from what is being lifted or spread, as well as away
from a hot surface. The blade of the spatula is
wide and thin.
Cutting
Cutting equipment is used to peel/cut/slice/chop foods. It can
also be used to reduce the size of foods. Some cutting
equipment is grater, cutting board, kitchen shears and a tin
opener.
Equipment Description & Uses
Grater There are several types of graters that have
different sizes of grating slots, and can
therefore aid in the preparation of a variety of
foods. They are commonly used to grate
cheese, and can also be used to grate other soft
foods.
Cutting Board A cutting board is a durable board on which is
used to place materials for cutting. The cutting
board is commonly used to prepare food.
Cutting boards are often made of wood or
plastic and come in various sizes.
Kitchen Shears Kitchen Shears is a specially-designed scissors
that is used in the kitchen. They are not shaped
like regular scissors; they are shaped like shears.
Some are specially made for poultry and fish,
with one of their blades being a serrated to help
cut through flesh such as chicken joints or fish
fillets.
Tin Opener A can opener or tin opener is a device used to
open tin cans (metal cans).
Cookware
Cookware comprises of cooking vessels, such as saucepans,
intended to use on a stove. Some cookware is frying pan,
roasting pan, saucepan, and a paella pan.
Equipment Description & Uses
Frying Pan A frying pan or skillet is a flat-bottomed pan
used for frying, searing, and browning foods.
It is typically 200 to 300 mm (8 to 12 in) in
diameter with relatively low sides that flare
outwards, a long handle, and no lid.
Saucepan A saucepan is a cooking vessel
generally used on top of a range for heating
food and or reducing sauces. Saucepans can
be made of a variety of materials, like
aluminum and stainless steel, and the
cooking surface can have a non-stick coating.
Roasting Pan A roasting pan is a piece of cookware used
for roasting meat in an oven, either with or
without vegetables or other ingredients. A
deep roasting pan can hold vegetables and
other ingredients so that meat can sit on
rather than a rack, allowing the vegetables to
absorb the fat and juice from the meat while
cooking.
Paella Pan A cooking vessel that is used to prepare the
traditional Spanish rice dish, paella.
The pan is a large diameter, shallow skillet-
like pan that may be made from cast iron or
enameled metal. Most paella pans have
handles on either side.
Bakeware
Bakeware is classified as tins, trays and other items used during
baking. Bakeware comprises of cooking vessels intended for use
inside an oven. Some bakeware are baking pan, cooling rack,
bread loaf pan and a cake pan.
Equipment Description & Uses
Baking Pan A baking pan is a flat, rectangular metal pan
used in an oven. It is often
used for baking bread rolls, pastries and flat
products such as cookies, sheet cakes, and
pizzas.
Cooling Rack A cooling rack is used to allow air to
circulate freely to cool baked goods, and to
prevent them from getting soggy from
condensation. A tight grid is typically the
best format for a cooling rack, to prevent
thin baked goods from breaking or falling
through.
Bread Loaf Pan A bread pan is a kitchen utensil in the form
of a container in which bread is baked. Its
function is to shape bread while it is rising
during baking. The most common shape of
the bread pan is the loaf, or narrow
rectangle, a convenient form which enables
uniform slicing.
Cake Pan A cake pan which is commonly found in
every kitchen. Cake pans can be round,
square or rectangular and are available in
several sizes. Probably the most popular is
the 9 x 13 x 2 inch rectangular cake
pan that is used to bake cakes, bars, and
savory dishes, such as lasagna.
Labour Saving Devices
Labour saving devices are equipment that reduces (human)
effort, hard work and labour. Some labour saving devices that
are used in the kitchen are pressure cooker, microwave oven,
gas stove and a kettle.
Equipment Description & Uses
Pressure Cooker Pressure cooking is the process of cooking food,
using water or other cooking liquid, in a sealed
vessel, known as a pressure cooker. As pressure
cooking cooks food faster than
conventional cooking methods, it saves energy. The
trapped steam increases the internal pressure and
allows the temperature to rise.
Microwave Oven For cooking or reheating small amounts of food,
the microwave oven may use less energy than a
cook stove. Although microwave ovens are touted
as the most efficient appliance, the energy savings
are largely due to the reduced heat mass of the
food's container.
Gas Stove In cooking, a gas stove is a cooker or
stove which uses natural gas, propane, butane,
liquefied petroleum gas or other flammable gas as
a fuel source.
Kettle A kettle, sometimes called a tea kettle, is a type of
pot, typically metal, specialized for boiling water,
with a lid, spout, and handle, or a small kitchen
appliance of similar shape that functions in a self-
contained manner.
