Once upon a time…..
One winter, 1800 years ago during the Eastern Han Dynasty, a famous physician
of traditional Chinese medicine, named Zhang Zhongjing, went back to his
village. He observed many people in his village suffered frostbite, mainly
around their ears because of the lack of sufficient food and proper clothes.

Zhang was determined to help alleviate the problem. He mixed shredded lamb,
black peppers and a medicinal herb. He put small portions of the lamb mix in
dough skin and shaped them like ears and then boiled them. Those who were ill
got two ‘ears’ along with a bowl of warm soup. After a few days, the frostbite
was gone and the village people got healthier. The first dumplings were
originally called “tender ears” (jiao’er).

Since then, people began imitating Zhang’s recipe to celebrate Chinese New

1 pack of dumpling skin
250 gram ground pork or chicken
15 gram cornstarch (maizena)
1 egg
2 garlic cloves
1 green onion (bawang pre)
15 ml sesame oil
5 gram soy sauce (kecap asin)
ground white pepper and salt to
taste
