1. Ingredients

THE SAUCE

 1 Tbsp + 1 tsp sweet soy sauce "kecap manis" (what is kecap manis?)
 1 Tbsp oyster sauce
 1 ½ Tbsp soy sauce
 ½ Tbsp sesame oil
 1 Tbsp sambal oelek (chili garlic paste) or sriracha

THE REST

 5 cloves garlic, chopped


 1 heads shallots, chopped
 Thai chilies, chopped.
 15-18 shrimp.
 1 cup julienned carrots
 1 cup cabbage, chopped
 2 cups dark sturdy greens
 2 Eggs
 450g cooked egg noodles
 Green onion, chopped
 2 tomatoes, wedges
 Fried shallots (Optional)

2. Instructions
 Pour all sauce ingredients together in a small bowl and start to mix it.
 Heat a little oil over the wok with medium high heat and sear off the.
 When fully cooked, remove from wok and set aside. Don’t clean the wok
 Add a little more oil in the wok as you want, turn heat on to medium low, and add the garlic,
shallots and chilies. Sauté until the shallots are mature.
 Add all the vegetables except tomatoes, turn the heat up to medium high, add the sauce then
toss it until the sauce mixed well.
 Break the yolk. Put all the vegetables back over the eggs, let it set for a couple second, then toss
everything until mixed well.
 Then add the noodles, seafood, and the sauce, then keep tossing until all the sauce is well
mixed.
 Turn off the heat and toss in tomatoes and the green onions.
 Plate and serve immediately.
