Chicken Saute with mushrooms, baby onions and a cream sauce

4 portions
Butter,margarine 50g
Chicken 1250g-
1550
Baby onions 100g
Mushrooms 100g
Flour 25g
Dry white wine 30ml
Double cream 125ml
Salt To taste
Pepper To taste
Paprika To taste
Method

1. Cut chicken for sauté


2. Lightly flour and season the chicken.
3. Heat the butter or margarine in a sauté pan in a fairly hot pan
4. Cook the chicken on both sides to a golden brown.
5. Cover with a lid and cook on stove or in oven until tender.
6. Remove chicken and place in a suitable serving dish
7. Add baby onions to pan, cover with a lid, cook on a gentle heat for 1 -2 minutes
8. Add mushrooms, cover with a lid, cook on a gentle heat for 3 – 4 minutes.
9. Drain off fat.
10. Add the white wine, reduce by half.
11. Add the cream, bring to the boil and season.
12. Pour over the chicken.
