Aam ka Panna recipe


A tall, cooling glass of Aam ka Panna, a green mango cooler, is exactly
what you need for the dog days.

Ingredients
3 large green or raw mangoes
1 tsp green cardamom powder
2 to 2 ½ cups sugar (cane sugar or coconut sugar or powdered jaggery)
Dash of salt
Lime wedges, mint, cayenne or roasted cumin powder for garnish (optional)

Instructions
1. Pressure cook the mangoes with two cups of water for up to five "whistles" or for 15
minutes in the Instant Pot. If you don't have either a pressure cooker or an Instant Pot,
place the mangoes in a saucepan, cover with an inch of water, and bring to a boil. Cover
the pot and let simmer over medium-low heat until a knife pierced near the center goes
cleanly through.
2. When the mangoes are cool enough to handle, peel them and remove all the pulp to a
blender. Discard the seeds and peels.
3. Add the sugar to the blender along with the cardamom powder and a dash of salt. A rule
of thumb for the perfect sweetness is to use as much sugar as mango pulp, so be sure to
measure your pulp. Blend into a very smooth paste. This is the concentrate. You can
refrigerate this for 3-4 days or freeze for 2-3 months.
4. To serve the panna, measure out ¾ cup of the concentrate and stir in 2 ½ cups of ice-cold
water. This makes enough for 3-4 servings.
5. You can crush some mint into the glass before serving, or add a dash of cayenne or
roasted cumin. You can also serve with lime wedges. Or just serve plain. It's delicious.
