TABBOULEH

1-1/2 cup bulgar wheat

7 large spring onions (scallions), chopped fine


3 cups parsley, packed tight; chop fine in food processor
1 medium tomato, chopped
½ to ¾ large cucumber, chopped fine
4 tablespoons fresh mint, chopped fine

6 tablespoons lemon juice


6 tablespoons fine olive oil

salt and pepper

Soak wheat for about 1 hour in cold water. Drain for about ½ hour, then
spread out on cookie sheets and let dry for an our until dry and rubbery.

Mix all ingredients together shortly before serving.
