SPICY EGG & SAUSAGE CASSEROLE

6 or 7 slices of bread, crust removed, cut into 1” squares


1 16-oz. tube of mild or spicy sausage
1 cup chopped green bell pepper
½ cup of chopped onion
1 ½ cups of grated cheese
1 teaspoon of dry oregano
1 teaspoon of dry basil
1 tablespoon of dry mustard
7 large eggs
3 cups of milk
5 slices of tomato
grated Parmesan cheese

1. Grease a 9” x 13” pan


2. Arrange bread over bottom of pan
3. Fry sausage over medium heat until done and drain
4. In a large bowl combine sausage, pepper, onion, cheese,
oregano, and basil; spread this over bread
5. In a bowl combine eggs, dry mustard and milk; pour over bread
mixture
6. Cover top with tomato slices and sprinkle with Parmesan
7. Co0ver with foil and leave in refrigerator over night
8. Bake at 350 for one hour; let stand 5 minutes before serving.
